Mom's Patuda No Lot

One of my favorite recipe's that I learned from my mom!

Ingredients

  • 1.5 cup handva flour I used Deep brand
  • 1 tbsp oil
  • 1 cup yogurt
  • 3 cup water
  • 1.5 tsp carom seeds
  • 1/4 tsp turmeric powder
  • 1 tsp sesame seeds
  • 1 tsp ginger paste
  • 4 cloves garlic minced
  • 2 tbsp Thai chili peppers finely chopped
  • 1 tsp lemon juice if needed
  • 1 tbsp lasan nu marchu

Instructions

  • Take your handva flour and oil, and lightly mix together until it turns into crumbles. Set aside.
  • Whisk together your yogurt and water, and add to your pot on medium low. Add salt per taste.
  • Let it heat for about 1 minute, and then add in your carom seeds, turmeric powder, sesame seeds, ginger paste, and garlic. Give it a mix.
  • After 5-7 minutes, you will notice the yogurt and water thickening and turning a bit yellow. Once that happens, add in your chopped chili's. Do a taste test and add lemon juice if needed.
  • Turn your heat to high. Once it starts bubbling, add in your handva flour. To properly do this, add your flour to the pot. Take your spoon or spatula and mix it in 1 full circle. Do not mix it any more.
  • When it starts bubbling and majority of the flour is coated, cover your pot with a lid and change heat to medium.
  • Keep checking the pot. At the 10 minute mark, open the pot and mix it so everything is even. At about 15 minutes, your Patuda No Lot should be ready!
  • Drizzle some additional oil if you like, and eat with lasan nu marchu. Serve while hot!

Notes

  • Like I mentioned before, make sure you only turn your spatula/spoon in ONE clockwise circle when you add the handva flour to the pot. You want it to cook in a clumped up format for best results!!
