Semi-Homemade Mediterranean Tostadas

A fun little appetizer or snack that you didn't know you needed in your life :)

Servings: 8 tostadas

Ingredients

  • 8 tostadas homemade or store-bought
  • 10 oz container black bean hummus or any flavor you like
  • 1 cup tzatziki
  • 1 large cucumber skin removed and diced small
  • 1 small red onion diced small
  • 1 large tomato diced small
  • 1 jalapeno diced small
  • 1 tsp coriander powder
  • 1 tsp paprika
  • 1/4 cup parsley finely chopped
  • 1/4 large lemon juiced
  • 3/4 cup feta or more per preference
  • 2 tbsp olive oil

Instructions

  • Add your diced cucumber, red onion, tomato, jalapeno, coriander powder, paprika, parsley, and lemon to a bowl. Mix well. Taste and add salt + black pepper per your liking.
  • To a tostada, add a layer of black bean hummus, followed by a layer of tzatziki.
  • On top of that, add in a couple spoonful's of your veggie mixture.
  • Sprinkle on feta cheese and drizzle with olive oil!
