Preheat oven to 375 degrees Fahrenheit. Add your butter to a small pot on medium heat. Once melted, throw in all of your filling ingredients.
Let the apples cook until fork tender, ~5-7 minutes on low heat. Set aside and let it cool.
Cut 3 inch circles out of the pie crust. When there is no more space left to cut, knead the dough and use a rolling pin to get it thin enough to cut more circles. Each pie crust should yield about 12 mini circles.
Add about 1-1.5 tsp of the apples into the center of each circle. Fold in half and seal the sides with a fork.
Brush the top of each pie with almond milk. Coat with a generous amount of cane sugar.
Bake on a tray with wax paper for 20-25 minutes, until the top is golden brown.
Let them cool for 10 minutes before serving!
