Dill Cream Cheese Garlic Smashed PotatoesI was in my local grocery store and I came across a TON of fresh dill that they JUST put out. I wish I had my phone on me at the moment to document how pretty it looked, which is basically why this recipe was created. Don’t try to show me pretty things… I will buy them.

Dill Cream Cheese Garlic Smashed PotatoesDid I ever tell you guys that my most favorite “meal type” to cook is appetizers? And of course it’s my favorite to eat too! I love mini foods, and things that are easy and on the go. 75% of my food ideas are appetizers because lets be real – at dinner parties/weddings/birthdays… what do we get most excited about food-wise? That’s right… APPETIZERS! For me, cooking aps are fun because you can never go wrong… there are numbers of different ways to tweak any recipe to make it with your own twist. It’s also a good way into tricking your guests by making something extremely easy look extremely fancy 🙂

Dill Cream Cheese Garlic Smashed PotatoesWhen I think potatoes, I instantly think ‘cheese’. Even though I instantly think ‘cheese’ after many of my thoughts… hehe. There’s nothing better than a piping hot potato, under a creamy bed of cheese, garnished with fresh herbs. There really isn’t. Now don’t get me wrong… sour cream does taste pretty damn good with this recipe too if you’re in the mood for something lighter. OR why not try it both ways?!

Dill Cream Cheese Garlic Smashed PotatoesThis is one of the best appetizers to have at a dinner party. It can be served warm, or it can be served at room temperature… its delish either way! With the holiday’s coming up, this is the perfect little snack to start off a fun evening with friends & family.

Dill Cream Cheese Garlic Smashed Potatoes

Dill Cream Cheese | Smashed Potatoes

  • 1.5 lb. bag baby red potatoes
  • 1 tbsp olive oil
  • 4 cloves garlic (grated or minced)
  • 1/2 cup cream cheese (whipped)
  • 3 sprigs dill

To Garnish (if desired)

  • 1 sprig dill
  1. Wash your red potatoes. Boil them for 15-20 minutes until they are fork tender. Add salt to pot.

  2. Preheat oven to 375 degrees Fahrenheit.

  3. Mix together the olive oil and garlic. Add salt and black pepper per taste.

  4. Dry the potatoes when they are done. Using a fork or a potato masher, smash the potatoes. Coat each potato with the garlic olive oil. 

  5. Bake for 10-12 minutes.

  6. While potatoes are baking, chop up the dill and mix it into the cream cheese.

  7. When potatoes are out of the oven, evenly distribute the dill cream cheese on top.

  8. Garnish with additional dill if desired.

*Whipped cream cheese works best with this recipe because it is easily mixable. If you can not find whipped cream cheese, you can use an electrical whisk to get it nice and fluffy.

*Feel free to use any color potatoes. (red, white or purple)
