Custard & Chia seed Pudding cups

HELLO EVERYONE and Happy Holi! Even though I am not celebrating Holi like we traditionally would, we can still stay on top of the holiday and do what we do best… EAT. These Custard & Chia Seed Pudding Cups are the perfect NO BAKE dessert to serve for Holi because they are colorful, flavorful, and delicious!

Custard Flavors

I am using the National Foods custard powder which comes in 4 different flavors. In this recipe, I am using the strawberry, banana, and mango. They also have a vanilla flavor, but I wanted to leave that out since I wanted this dessert to be colorful! Custard is super easy to make when using a powdered mix like this, so I highly recommend this because it takes very little effort and time!

Chia Seed Pudding

Throughout the years, I have gotten countless amount of messages asking how to make a good chia seed pudding. The key is to use almond milk, and get a good quality of chia seeds! I usually do 1 cup of almond milk with 3-4 tbsp of chia seeds. The more chia seeds you add, the thicker it will be, so this is a personal preference and you can use however much you want!

Fresh Fruits to Garnish

I LOVE to add all types of berries on top of these little cups. How gorgeous do they look? You can add any sort of fruit you like, but get COLORFUL! These are supposed to be fun and whimsical, so add your own special touch to them. Use in season fruits, and cut them up into bite size pieces so you can tower them on top! 😉 If you want another idea for dessert using some fresh fruits, check out my Fruit Chaat Cones!

Custard & Chia Seed Pudding Cups
An easy NO BAKE dessert that anyone can master in no time!

INGREDIENTS

  • 3 cups whole milk
  • 6 tbsp sugar
  • 1 tbsp mango custard powder
  • 1 tbsp banana custard powder
  • 1 tbsp strawberry custard powder
  • 2 cups almond milk
  • 6-8 tbsp chia seeds
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • fresh fruit of choice

INTRUCTIONS

  1. Take 1 cup of milk and add 2 tbsp of sugar. Let it come to a boil. Take some of the hot milk and add it to the mango custard powder and mix. When the custard powder is dissolved, pour it into your pot of whole milk. Keep whisking until it gets thicker (2-3 minutes). Pour it out into a glass bowl with a lid. Wait for it to cool and then chill overnight or for a few hours. Repeat the same steps with the other two flavors.
  2. Mix together the almond milk, chia seeds, honey, and vanilla extract in a glass bowl with a lid. Set aside for a few minutes and then mix again. It will slowly start getting thicker. After about 10 minutes, close the lid and put the bowl in the fridge overnight or for a few hours.
  3. To assemble, add a layer of mango custard, followed by a layer of chia seeds. Then add a layer of banana custard followed by a second layer of chia seeds. And lastly, add your banana custard layer, followed by the third layer of chia seeds. Top with fresh fruits and a drizzle of honey. Serve for dessert or even brunch!
