Cheddar & Corn Tarts

It’s 4:25 am and I’m writing this blog post because I need you guys to be addicted to my Cheddar & Corn Tarts. To be very honest, I’m in Cabo and I have delicious Mexican food surrounded by me, but this just hits different. It’s fluffy, cheesy, and extremely easy to make!

Preparing Ahead of Time

The best part about this recipe is that you can make it in advance! The cheddar & corn mixture can be made and stored in the fridge for up to 3 days without going bad. AND, you can also use it as queso… win-win. I rarely even eat corn so I promise you- it tastes delicious.

Libby’s Vegetables

In this recipe, I’m using Libby’s Whole Kernel Sweet Corn. Libby’s has amazing canned foods that you can buy all around the country. My personal favorite is their corn because coming from someone who barely eats it, it’s GOOD. Since I’m a vegetarian, I’m always looking for fun ways to entertain company… and fun ways means fun food. Libby’s has a little something for everyone, and all of their products are fresh and clean.

If You Like Puff Pastry…

So… Like I said, If you like puff pastry, this is the recipe for you. It’s a great appetizer and a great way to entertain guests that aren’t expecting much. Puff pastry can be bought in the frozen section of most grocery aisles, and the key to the recipe is that you have to make sure it’s thawed before using it. Cheddar & Corn Tarts
An easy way to serve your guests this summer!!

INGREDIENTS

  • 2 tbsp butter
  • 2 tbsp all purpose flour
  • 2 cups milk (I used 2%)
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/3 cup tomatoes (diced small)
  • 3 cups cheddar cheese (shredded)
  • 2 tbsp green garlic (or chives)
  • 1 can Libby’s Whole Kernel Sweet Corn
  • 3 large puff pastry sheets (thawed if frozen)

INTRUCTIONS

  1. Add butter to a pan on medium heat. Once melted, add in your all purpose flour and mix until all of the flour is cooked through. Add milk and mix to combine.
  2. Put the heat on low. Add salt and black pepper to taste, followed by the paprika and cayenne pepper. Mix well until it starts getting thicker.
  3. Add tomatoes, 2 cups of the cheddar cheese and green garlic (or chives). Mix well and then throw in your Libby’s Whole Kernel Sweet Corn!
  4. Take everything off of the heat and turn your oven to 350 degrees F.
  5. While the oven is heating, prepare your tarts. Take your pastry sheets and cut them into 4 sections length wise, and then cut them in half width wise. You should have 8 rectangular pieces from each sheet.
  6. Take one of your rectangles and brush water on top of it. Then take another rectangle and place it right on top of the first one. Complete when you have 12 total.
  7. When the oven is ready, add your tarts on a baking sheet and let them bake for 20-25 minutes.
  8. Once they are done, cut a rectangle around the perimeter of each tart and push down so all of the flakes get packed in. Take your cheddar and corn “dip” and fill each tart to the top with it.
  9. Add some more cheddar cheese and sprinkle with more green garlic. Pop them back into the oven for 5-10 minutes, until cheese is melted. Serve hot!
