Chopped Greek Salad

I recently did a questionnaire on my Instagram stories asking for what you guys want to see on the blog. There were an overwhelming amount of responses for “healthy and refreshing summer salads”. I mean, I guess it’s about damn time I make a salad recipe because the last one was almost two years ago LOL! So, here is my Chopped Greek Salad!

My Favorite Salad Greens

I have seen a lot of Greek salads eliminate the greens and just keep the veggies + dressing. That definitely tastes delicious, but I like super chopped leafy greens in mine. I used a spring mix that has a bunch of greens combined, but you can always use baby spinach or arugula! I know romaine lettuce doesn’t have too many nutrients, but there’s something about that crunch which also goes so well in this Chopped Greek Salad!

Colorful & Flavorful Veggies

Greek salads are always the first that catch my eye because they are so colorful! In mine, I love to use orange or yellow bell pepper, black olives, cherry tomatoes, red onion and English cucumber! The colors make this salad so fun and it actually makes me want to eat it lol!

Chopped Greek Salad
A colorful summer salad that can eaten as a side or a meal with added protein!

INGREDIENTS

  • 4 cups leafy greens (chopped small (I used a spring mix))
  • 1/2 cup black olives (sliced)
  • 1 cup orange bell pepper (cubed medium)
  • 1 cup cherry tomatoes (halved)
  • 1 cup red onion (sliced)
  • 1 cup English cucumber (halved long ways and sliced)
  • 1 cup avocado (cubed medium)
  • 1/2 cup crumbled feta
  • 1/4 cup Greek Salad Dressing

INTRUCTIONS

  1. In a large bowl, combine all of your salad ingredients (minus the dressing). Try to chop each ingredient to be the same size.
  2. Add the Greek Salad Dressing last, mix, and add salt + black pepper per taste.
  3. Adjust for seasoning and serve as a side salad or with some protein for a full meal!

NOTES

  • You can use any greens you want. I used a spring green mix, but I think baby spinach or arugula would also be delicious with this recipe!
  • These measurements make 2 big portions of salad (if eating for dinner). Try to add some protein to make it a complete meal.
  • If you are serving this as a side, this will make about 4-6 side salads.
