Lemon Ricotta Gnocchi

Hi folks! Well, it’s been quite some time since I’ve posted a new recipe lol! I promise the wait is worthwhile because my Lemon Ricotta Gnocchi is truly one of a kind 😉 It’s vibrant and refreshing from the lemon + cheesy and creamy from the ricotta. That’s the perfect combo in my opinion!

Choosing a Good Ricotta

When I’m eating pasta or something that I know will be cheesy, I don’t opt for the “fat free” or “reduced fat” options. If I’m eating ricotta cheese, I’m EATING THE GOOD STUFF! I love to get a whole milk ricotta, and Galbani is one of my favorite brands to purchase. It’s available at almost every grocery store, and it’s always a very affordable price. I love all of their dairy products, and you will see my using them very often!

Can I use a Different Pasta?

While I do love gnocchi, I will admit that it can get SUPER heavy and filling. The best part about this dish is that you can customize it with any pasta you’d like. The sauce is super thick and creamy so it would hold on to any noodle shape very well, so I highly recommend spaghetti, fettuccini, or bucatini! If you are trying to use up any other pasta, feel free to do so. There’s really no right or wrong to this!

Adding Other Ingredients

This dish is meant to be super quick, meaning a few simple ingredients. However, don’t be shy to add your own touch to it! I personally hate peas, but peas pair really well with creamy sauces. Lemon Ricotta Gnocchi
A bright & refreshing pasta dish to enjoy in the Fall!

INGREDIENTS

  • 1 tbsp oil
  • 6 cloves garlic
  • 2 tsp crushed red pepper flakes
  • 4-5 springs thyme (whole stems or roughly chopped)
  • 3/4 cup ricotta cheese
  • 1 large lemon
  • 17.5 oz gnocchi
  • 1/2 cup pecorino romano (or parmesan)

INTRUCTIONS

  1. Boil your pasta water and add a LOT of salt.
  2. Warm up your oil in a large pan. Once hot, add in the garlic, crushed red pepper flakes, and thyme.
  3. Once you see the garlic getting a little brown, add in your ricotta. Give everything a mix and add salt and black pepper per taste.
  4. Turn sauce to low heat, and add your gnocchi to the boiling water.
  5. When gnocchi is done, add it directly into your ricotta sauce. If the sauce is too thick, add a little bit of pasta water as desired.
  6. Zest some of your lemon, and then cut it in half and squeeze in the juice from both halves.
  7. Add in your pecorino romano cheese and mix everything well.
  8. Serve immediately while hot!
