Vegetarian Red Curry

Today I’m sharing a family favorite of ours… Vegetarian Red Curry! This is one of those one pot, 30 minute meals that are so easy to make for lunch or dinner! I love to make this recipe in the fall and winter, because it’s a super cozy meal, and it the ultimate comfort food packed with lots and lots of Thai flavors!

Curry Paste

You can be ambitious and make your own curry paste if you like, but it cuts down so many steps if you buy the ready made paste… which is what I tend to do! In my opinion, the brand “Maesri” is the best. You can find it at any local Asian grocery store, or even on amazon. I like these little pods a lot because they are the perfect size for this recipe, and they taste super authentic. You can even try their other curries, such as green or even yellow sour curry! 

My Favorite Vegetables for Curry

You can essentially add anything you want in your curries. I love to add garlic, ginger, and thai chili’s as the base. This sets the tone for your whole dish, which is why I tend to add EXTRA! Other than that, I love to add onion, assorted bell peppers, broccolini, spinach, thai basil leaves, and scallions! Other options to add are mushrooms, green beans, and even bean sprouts! If you eat meat and want to make this a main dish, feel free to add any source of protein or tofu.

Vegetarian Red Curry
A one pot meal that's ready within 30 minutes!

INGREDIENTS

  • 2 tbsp oil
  • 6 cloves garlic (minced)
  • 1.5 tbsp ginger (grated / paste)
  • 2 thai chili peppers (finely chopped)
  • 1/2 cup white onion (chopped)
  • 1 cup bell pepper (chopped, any color or assortment)
  • 4 tbsp red curry paste
  • 4 lime leaves
  • 1 cup vegetable broth
  • 13.5 oz can coconut milk
  • 1 bunch broccolini
  • 1 cup spinach
  • 1/2 cup thai basil leaves
  • 2 scallions (finely chopped)

INTRUCTIONS

  1. Add oil to your pan on medium heat. Once it’s hot, add in your garlic, ginger, and thai chili peppers.
  2. After 30 seconds or so, add in your onion and bell pepper. Let this cook for about a minute, mixing occasionally.
  3. Add in your red curry paste, mix until everything is coated. Throw in your lime leaves and then pour in the vegetable broth, followed by the coconut milk.
  4. Mix until you get a nice bright colored curry. Let this cook on medium low for about 5-7 minutes and mix occasionally.
  5. After the 5-7 minutes, add in the broccolini, spinach, and thai basil leaves. Cook for another 2-3 minutes, or until the greens have wilted and the broccolini is fork tender.
  6. Taste and add salt / lime per preference. Garnish with scallions. Remove from heat and serve with rice!

NOTES

  • Serve with fried rice or plain white rice.
  • Store in fridge for up to 3 days.
  • You can add any other veggies of your choice, or tofu / any protein!
