Simple Vegan Sandwiches

HI guys! I have a super simple recipe for you.. it’s so simple that it has simple in the name! Introducing my Simple Vegan Sandwiches! These sandwiches are pretty basic in terms of what goes in them, because it’s a classic veggie sandwich. But the part that makes these sandwiches the bomb.com is the delicious vegan aioli that is slathered alllll over the 2 slices of bread 🙂
I talk about this a lot, but I love vegan mayo. I’ll still get sandwiches with regular mayo if i’m out getting lunch, but I typically only use vegan mayo at home. My favorite is Sir Kensington’s Avocado Oil Fabanise, which is just a fancy term for vegan mayo. Aioli is really quick to make, and is basically just jazzed up mayo. Obviously I like to add garlic in everything, so this aioli is loaded with garlic, oregano, crushed red pepper flakes and a fresh squeeze of lime!
To complete this beautiful sandwich, I used a couple slices of my favorite vegan cheese by Field Roast: Chao – Tomato Cayenne With Spicy Pepper! Along with that, I used Ezekiel sprouted bread which is high in fiber and protein, and a lot better than regular white/wheat bread.
When I was taking these photos, I made way too many sandwiches, so they obviously were tested by friends: 1 vegan and 2 carnivores… and they LOVED IT. I also had a couple left over which stayed perfect overnight in the fridge because Ezekiel bread doesn’t get soggy! So it’s the perfect sandwich to make at night for lunch the next day. Simple Vegan Sandwiches
Sandwich
- 8 slices of Ezekiel bread
- 8 slices vegan cheese
- 1/2 cucumber (sliced)
- 2 tomatoes (sliced)
- 2 cups mixed greens
Aioli
- 4 tbsp vegan mayo
- 4 cloves garlic (minced)
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp oregano flakes
- 1 tsp of juice from a lemon
Mix together all of the aioli ingredients. Add salt and black pepper per taste.
To assemble the sandwiches, evenly spread aioli on all 8 slices. Then add a slice of cheese on all 8 slices of bread too.
On 4 slices, evenly layer on the mixed greens, tomatoes, and cucumber.
Close off the sandwiches with the other 4 slices. Cut in half and serve!
