Greek Quesadillas

Hi everyone! Recently I was inspired to create a fusion quesadilla, and I figured that Greek ingredients would obviously, without a doubt, be the B E S T ! GREEK QUESADILLAS are so tasty, and I’m using all of my favorite ingredients in this recipe.
One of the reasons why I love this quesadilla is because of the spinach tortilla. If you buy the right kind, it tastes like you are chillin’ on a boat in the Mediterranean Sea, eating a… GREEK QUESADILLA! If you can find Baja Wraps in the Spinach with Garlic & Pesto flavor, you will LOVE it! I’ve been using them for everything recently and they are so delicious. Of course if you can’t find these quesadillas, feel free to use regular flour ones. You can also add in some fresh spinach and garlic to add the flavors!
Quesadillas are literally the best when it comes to weeknight dinners, because they don’t require any effort. All you need are a few ingredients & a pan! This recipe is perfect for all ages and perfect for the picky eaters out there 🙂 Hope you enjoy and please share photos with me!
Greek Quesadillas
- 4 spinach tortillas
- 1/2 cup hummus (any flavor)
- 2 cups mozzarella cheese (shredded)
- 1/4 cup olives (sliced)
- 1 mini cucumber (sliced)
- 2-3 tbsp sundried tomatoes (chopped)
- 1 cup feta cheese (crumbled)
- butter
Take some hummus and spread it all over your spinach tortilla.
On one side, start layering. First add some mozzarella cheese. Then add the olives, a few cucumber slices, and sundried tomatoes.
Then sprinkle on some feta cheese and close up your quesadilla.
Turn your pan on medium heat. While it’s heating, use a butter knife to butter both sides of your closed quesadilla. Directly add it to the pan and let it cook on medium low for about 3 minutes on each side. Keep a lid on the pan as the quesadilla heats.
Once it’s crunchy/done to your desired preference, remove from heat, cut into 3 pieces and serve immediately !
