Garlicy Mint Beet ChipsI agree – it is bizarre that I am in love beets, which most people tend to stay away from. Although, when they are baked in a chip form, the “earthy” taste goes away completely, especially because we are seasoning them with garlic and mint!

Garlicy Mint Beet ChipsMaking these Garlicy Mint Beet Chips is so easy… you can either slice the beets thinly with a sharp knife, or use a mandolin to slice up them up into equal sizes so that it is consistent when you bake them. Mint is always at the top of my list when choosing an herb. It gives off an extra bit of freshness to everything, and the flavor ALWAYS lasts.

Garlicy Mint Beet ChipsPrefer any other toppings?! You can always substitute the mint if it is not in season. Rosemary tastes amazing as well. It gives off a great aroma, or you can use some Italian parsley. Although don’t forget the garlic because that is an absolute must 🙂

Garlicy Mint Beet Chips

INGREDIENTS

  • 1 1/2 tbsp olive oil
  • 2 medium beets
  • 3 cloves garlic (grated)
  • 6 leaves of mint (finely chopped)

INTRUCTIONS

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Thoroughly wash and dry your beets. Peel them to get all of the skin off.
  3. Use a mandolin or sharp knife to cut the beets into thin slices. You want them to be thin enough so they are a little floppy.
  4. Combine the olive oil, grated garlic and mint leaves. Mix in the sliced beets and be sure to coat evenly.
  5. Lay the beets on a baking tray and sprinkle with course salt (to your taste).
  6. When the oven is ready, bake for 15-20 minutes, until the edges of the beets start to look burnt. (Be sure to check up after the 15 minute mark. Each oven works differently so your chips may be done well before 20 minutes).
  7. When the edges look ready, take out the tray and let it cool for 5-10 minutes. They will get crispier as they cool. Once cooled, they are ready to eat!
