Banana Oatmeal Pancakes

I’m keeping this one short and sweet, because that’s how this stack of Banana Oatmeal Pancakes is! I’m a SUCKER for fluffy pancakes, but your girl needs to chill on her sugar intake, lol. During the beginning of quarantine, I ended up making a lot of different types of oatmeal, and this was by far my favorite recipe. It’s perfect for your cravings, pretty healthy, and super quick to make!
Oatmeal Brands / Types
I, personally, get a LARGE sized bag of Bob’s Red Mill Gluten Free Rolled Oats. These are great for the pancakes, but also really good for oatmeal in the morning, different types of pastries, and even overnight oats! You can literally find them at any grocery store.
Making This Vegan
Yupp – this is one of those that you do not need to worry about if you are vegan. It’s a pretty common method to use a flaxseed + water combo to get the consistency of an egg, so feel free to do that replacement. Obviously I added some chocolate shavings and extra banana on top of these pancakes, but you can always add other things to the batter! Get as wild and funky as you’d like. Blueberries, chocolate chips, sprinkles, or even some food coloring to get them into rainbow pancakes! The options are unlimited.
