Basil Chutney & Caprese Panini

Who’s ready for some Basil Chutney & Caprese Panini’s??!?! I know I am… l o l. 

After leaving Italy, my craving for mozzarella cheese is unreal. Nothing beats a good caprese salad… I mean NOTHING. And if you know me, you know that’s the only type of salad you’ll catch me eating!

You best believe that this sandwich is going to have a kick to it, like most of my recipes do! Gotta have some spice, and it’s all in the basil chutney! For those of you know, green chutney is traditionally made with cilantro.  However, I made it basically the same way, but swapped the cilantro with basil… and it WORKS. 

It’s so mouth watering good! I had this Basil Chutney & Caprese Panini 3 days in a row- no joke 😉 The crunchy bite from the panini, with the melted mozz cheese, splash of flavor from the tomato and freshness from the chutney is UNREAL.

Basil Chutney & Caprese Panini
After leaving Italy, my craving for mozzarella cheese is unreal. Nothing beats a good caprese salad.

INGREDIENTS

  • 2 cups fresh basil
  • 5 cloves garlic
  • 2 serrano peppers
  • 1 tbsp lemon juice
  • 4 ciabatta bread rolls
  • 2 tomatoes (sliced)
  • 1 large fresh mozzarella ball (sliced)
  • 1/2 cup shredded mozzarella

INTRUCTIONS

  1. In a blender, mix together your basil, garlic, serrano peppers, and lemon juice. Add salt per your taste and add some water after you pulse it a few times. Keep blending until it is a nice smooth chutney. Add water according to thickness.
  2. Spread the basil chutney on both sides of your ciabatta bread. Add some shredded mozzarella cheese, a few slices of fresh mozzarella cheese, sliced tomato, and some salt & cracked black pepper.
  3. Close up your sandwich and use a panini press to cook it until the bread is toasted and the cheese is melted. If you don’t have a panini press, cook it on a pan!
  4. Serve while hot!
