Broccoli Mac & Cheese

I’m so excited to share this Broccoli Mac & Cheese recipe with you guys because it is SO BOMB!! As many of you already know, I am a HUGE mac & cheese fan, and throughout the years, I’ve made several spontaneous versions. Broccoli Mac & Cheese is definitely a classic, but you could say mine has a twist to it because of the cheese I’m using 🙂
Steaming Your Broccoli
You can either steam or blanche your broccoli, but I find my version super easy. I wash the broccoli and then cut it up into bite sized pieces. I add it to a bowl, splash some water on it, add some salt, and microwave for 30-45 seconds. This cooks the broccoli and gives it that nice green color.
Cheddar Gruyere Cheese
If you are wondering what this means… I bought the Wood River Cheddar Gruyere block with Roasted Red Pepper and Cracked Peppercorn. That is a MOUTHFUL to say, but I promise you that it tastes so good in this mac & cheese! I bought mine at Shop Rite, so I’m sure it can be found at any grocery store. You can even do half cheddar cheese and half gruyere. One thing I always tell my followers is that you should always buy the block of cheese and shred it at home. It will make your mac & cheese creamier.
Kid Friendly Recipe
Since most of my recipes are pretty heavy in spice, I would like to point out this this is a GREAT meal to serve to your kids! The cheese is not spicy at all, and the fact that you can sneak in broccoli is an added bonus. The cavatappi pasta is also a really fun shape for them to eat! I also have an Indian inspired Palak Mac & Cheese which is great for kids because it’s loaded with spinach. You can always eliminate the spice if need be!
