It’s 4:25 am and I’m writing this blog post because I need you guys to be addicted to my Cheddar & Corn Tarts. To be very honest, I’m in Cabo and I have delicious Mexican food surrounded by me, but this just hits different. It’s fluffy, cheesy, and extremely easy to make!
Preparing Ahead of Time
The best part about this recipe is that you can make it in advance! The cheddar & corn mixture can be made and stored in the fridge for up to 3 days without going bad. AND, you can also use it as queso… win-win. I rarely even eat corn so I promise you- it tastes delicious.
Libby’s Vegetables
In this recipe, I’m using Libby’s Whole Kernel Sweet Corn. Libby’s has amazing canned foods that you can buy all around the country. My personal favorite is their corn because coming from someone who barely eats it, it’s GOOD. Since I’m a vegetarian, I’m always looking for fun ways to entertain company… and fun ways means fun food. Libby’s has a little something for everyone, and all of their products are fresh and clean.
If You Like Puff Pastry…
So… Like I said, If you like puff pastry, this is the recipe for you. It’s a great appetizer and a great way to entertain guests that aren’t expecting much. Puff pastry can be bought in the frozen section of most grocery aisles, and the key to the recipe is that you have to make sure it’s thawed before using it.
