Chopped Greek Salad

I recently did a questionnaire on my Instagram stories asking for what you guys want to see on the blog. There were an overwhelming amount of responses for “healthy and refreshing summer salads”. I mean, I guess it’s about damn time I make a salad recipe because the last one was almost two years ago LOL! So, here is my Chopped Greek Salad!
My Favorite Salad Greens
I have seen a lot of Greek salads eliminate the greens and just keep the veggies + dressing. That definitely tastes delicious, but I like super chopped leafy greens in mine. I used a spring mix that has a bunch of greens combined, but you can always use baby spinach or arugula! I know romaine lettuce doesn’t have too many nutrients, but there’s something about that crunch which also goes so well in this Chopped Greek Salad!
Colorful & Flavorful Veggies
Greek salads are always the first that catch my eye because they are so colorful! In mine, I love to use orange or yellow bell pepper, black olives, cherry tomatoes, red onion and English cucumber! The colors make this salad so fun and it actually makes me want to eat it lol!
