Cozy Red Sauce Pasta

When cold months approach, I want nothing more than WARM FOOD. Pasta is literally my happy meal, my comfort food, my L I F E. I’m dramatic – but whatever. Pasta is one of those things that can be made with so much creativity because you can put anything in it.  However, this pasta is simple & spicy. Like I said before, it’s my comfort food and I eat this every time I feel like I need warmth or a simple pick-me-up 🙂 Welcome to the world with my Cozy Red Sauce Pasta!

Mini rigatoni is one of my favorite pasta shapes to eat! I don’t know why, but I love that it’s the perfect size. Also, all of your sauce fills it up so there’s a surprise in every little bite, LOL!

In all honestly, I could make sauce from scratch, but I really don’t want to. I love trying different brands and doctoring them up  This is a basic red pasta sauce, and you can use ANY brand you desire. I’ve been making this version of sauce for YEARS now, and it’s one of my favorites.  It’s easy and it really only requires a few things.

Like most of my recipes, you know there is going to be heat involved, and probably a taste of India  Curry powder & turmeric make this sauce PERFECT. Why stick to plain old red sauce when you can switch it up every now and then? You’ll understand when you try the recipe!

Cozy Red Sauce Pasta
Pasta is one of those things that can be made with so much creativity because you can put anything in it.

INGREDIENTS

  • 3 cups pasta
  • 2 cups red pasta sauce
  • 2 tbsp oil
  • 1/4 tsp cumin seeds
  • 1/4 tsp carom seeds
  • 1/3 onion (diced small)
  • 2 jalapenos (diced small)
  • 6 cloves garlic (minced)
  • 1 tsp cayenne pepper
  • 1 tsp turmeric powder
  • 1/2 tsp black pepper
  • 1/4 tsp curry powder
  • 3/4 cup cheddar cheese (shredded)
  • 1/3 cup parmesan cheese (shredded)

INTRUCTIONS

  1. Boil your pasta to al-dente. Make sure to add a GOOD amount of salt to the pasta water.
  2. While pasta is boiling, add oil to your sauce pan. Once it’s heated, add in your cumin and carom seeds. When they stop sizzling, add in the onions and jalapenos.  Let them cook on medium heat for about 2 minutes and then add in your garlic.
  3. Give it a stir and then throw in your cayenne pepper, turmeric, curry powder, black pepper and salt to taste.
  4. When onions and jalapenos are coated, add in your sauce.  Adjust seasonings as desired.
  5. When sauce is warmed up, throw in your grated cheddar and grated parmesan cheese.
  6. Your pasta should be done cooking by now, and you can throw it directly into your sauce pan. Reserve about 1 cup of pasta water.
  7. After mixing your sauce and pasta together, add pasta water as desired to get the consistency you want. I added about ¾ cup along the way.
  8. Serve immediately & enjoy!
