Fettuccine Alfredo

Sometimes I lie awake in bed, dreaming about creamy, saucy, goodness… aka FETTUCCINE ALFREDO!! I don’t know what it is about Alfredo sauce, and I’m sure the Italians hate us for this, but it’s just so dang good! I could honestly drink a bucket of this sauce LOL. In general, Fettuccine Alfredo is super easy to make, with minimal ingredients. Over the years I have seen so many recipes, but mine is set apart because of 1 lovely addition 😉

Key to the Best Sauce

I think heavy cream is the way to go for a THICK, luscious, and creamy sauce. I, personally, do not use heavy cream on a regular basis, so when I’m indulging, I don’t mind it for this recipe whatsoever! If you would like to make this a little lighter, you can do equal parts of heavy cream and half & half, or half & half and milk. This is truly your preference, but heavy cream all the way is mine! And for the highlight of this recipe, you MUST use the Boursin Cheese Garlic & Fine Herbs block! It adds more flavor and it’s just BOMB.

Serving Size + Additions

If you are eating this as a main course, I would suggest using this recipe for 6 people. If you are eating this as a side to your protein, veggies, or some good old garlic bread, this can feed up to 8! Since I don’t eat meat, I usually love to throw in steamed broccoli, or even a BUNCH of spinach to get in my greens! The options are unlimited, but once you have the basis done, you can add anything you want 🙂 P.S. this is probably the first recipe of mine that you don’t see any spice in LOL.

If you’ve been following me for a while, you know that pasta is usually my go-to meal. It’s such a quick fix, and the options are UNLIMITED. Fettuccine Alfredo
The creaminest and most delectable Alfredo sauce recipe!

INGREDIENTS

  • 1 lb fettuccine
  • 3 tbsp unsalted butter
  • 1/3 cup white onion (diced small)
  • 4-6 cloves garlic (shredded)
  • 1 pint heavy cream
  • 3/4 cup parmesan cheese (finely shredded)
  • 1/4 wheel Boursin cheese (garlic & fine herbs)
  • 1/4 cup parsley (finely chopped)

INTRUCTIONS

  1. Start by boiling the fettuccine noodles to al dente. Salt your water.
  2. While fettuccine is cooking, start on the sauce. Turn stove to medium high and add butter to a large pan.
  3. Once melted, add in your onion. Let it soften up for 2 minutes and then add in the garlic. Season with salt & black pepper per taste. Let this cook for another 2 minutes.
  4. Pour in the heavy cream followed by the parmesan cheese. The sauce will start thickening up as it gets heated more. Stir along the way.
  5. Add in your Boursin cheese and stir.
  6. The fettuccine should be ready by now. Take some tongs and add the fettuccine straight from the pot into your sauce pan, allowing bits of pasta of water here and there.
  7. Toss everything up until the noodles are coated with the sauce and adjust seasoning if needed. Garnish with parsley & enjoy!

NOTES

  • Try to get a block of parmesan cheese and shred it at home! The sauce will come out so much creamier!
  • The sauce to pasta ratio is just about perfect, but you can adjust and make it saucier if you’d like with pasta water.
