Greek Salad Dressing

If I’m taking time out of my life to write up a post on SALAD DRESSING, you know it’s gonna be good! This Greek Salad Dressing is simple, flavorful, and ready within minutes! I love to use this on a Greek Salad (duh), but you can also use this as the dressing on a pasta salad! It has the right amount of tang and spice!
Extra Virgin Olive Oil
This recipe calls for a cup of extra virgin olive oil. I know that seems like a lot, but the recipe is enough for about 12 portions of salad! If you are a big salad eater, I recommend you make it according to this recipe. If not, feel free to cut it in half or even 1/4. When it comes to using olive oil, PLEASE buy a good brand. Quality oil always amplifies the taste of a salad dressing, and I absolutely love Pompeian!
My Favorite Fresh Herbs
Salad dressings are meant to be fun and flavorful, because other than that, it’s just a bunch of vegetables and that’s very unappealing to me LOL. I know that salad dressings can also end up making a low calorie lunch into a very calorie heavy meal. To avoid that, I like to add in ingredients that bring out the most flavor so I don’t need to resort to those cream & rich textures. Using fresh herbs is a game changer, and if you can find them at your grocery store, or if you can grow them, I would say 1000% to use those. You will notice such a difference!
Using Honey & Dijon Mustard
To be honest, I don’t know if honey is a traditional ingredient in Greek Salad Dressing. I like to add it in dressings because it makes a “vinaigrette” less tangy. There’s definitely a lot of acidity in these dressings, so honey cuts and masks that. Dijon mustard is a favorite of mine to add because it gives a richness to the dressing, and also adds a peppery taste! Try out my Homemade Caesar Dressing if you want another salad dressing with Dijon Mustard in it!
