Grilled Peach & Arugula Salad

Happy Hump Day folks! Today I will be sharing a really delicious summer salad with you guys, and I promise you will be eating it on repeat!! My Grilled Peach & Arugula Salad is the perfect combination of sweet & savory! 

One of the reasons why I love this recipe is because salads can tend to get super boring, but not this one! Most salads have an insane amount of vegetables, which I often do not like. I love a mix of flavors and textures. Besides the peppery flavors of arugula, we are adding in some tart blueberries, sweet grilled peaches, crunchiness from candied pecans, freshness from cherry tomatoes, and some creamy mozzarella pearls! Need I say more? 

Grilled Peaches

Grilling peaches are my new favorite thing to do! They end up tasting so much sweeter and juicier! You can always grill them and eat them as a snack without the rest of the salad. Be sure to thoroughly oil the side that you are grilling!

Balsamic Glaze

I’m not a huge fan of balsamic vinegar because it’s too tart for me. Making balsamic glaze is extremely easy to do at home using balsamic vinegar, and will save you some money and a trip to the grocery store! 

Candied Pecans

I love the addition of candied pecans in this because it gives a crunchy element! The candied pecans are perfectly sweetened, so it literally makes the salad so perfect! You can use any nuts of your choice, or eliminate if you have a nut allergy.

Grilled Peach & Arugula Salad
If you haven't tried grilled peaches yet, you are MISSING OUT!

INGREDIENTS

  • 1/2 cup balsamic vinegar
  • 6 cups arugula
  • 1/4 cup blueberries
  • 1/4 cup candied pecans
  • 2 peaches (pitted)
  • 6-8 cherry tomatoes (halved)
  • 8-10 mozzarella pearls

INTRUCTIONS

  1. To make a balsamic glaze, bring your balsamic vinegar to a boil in a pot. Once it’s bubbling, reduce the heat and let it cook until all of the water evaporates and it turns into a thick glaze. This will take 5-7 minutes.
  2. Cut the peaches in half, take out the pits and brush some olive oil on them. Grill them on your bbq or stove top grill for 5-7 minutes, or until you get char lines on them.

Assembling the salad

  1. Take your arugula, blueberries, candied pecans, and cherry tomatoes, and add them to a salad bowl or serving tray. You can mix the salad or add each ingredient in layers.
  2. Add your mozzarella pearls on top, as well as the grilled peaches.
  3. Drizzle with the balsamic glaze and enjoy!

NOTES

  • I kept the peaches in half, but you can always cut them into smaller slices!
  • You can buy regular mozzarella pearls or marinated ones. I love the marinated ones because they have so much flavor!
