Lemongrass Noodle Soup

Cold weather ALWAYS calls for soup, in my professional opinion! 😉 Lemongrass Soup has always been one of my favorites to order at Asian restaurants. It has such a special, aromatic smell, which makes the soup so much more delectable! For me, noodles always belong in soup, so I created this Lemongrass Noodle Soup for you to enjoy all winter long!

How to use Lemongrass

I’ve put off making this recipe for a while because I’ve never really worked with lemongrass before. It’s quite simple to use though. I bought large stalks of it in from my local Asian store, and after washing it, I peeled off each of the green layers until I got to the thin white layer in the middle. You want to use the bottom 6 inches or so of the lemongrass, which is the most aromatic part. I like to cut each 6 inch piece in 3 smaller pieces, and then I cut the 3 small pieces length wise, so it opens up and the broth can soak up all of the flavor!

Ingredients for the Broth

You can certainly make homemade broth, but I love to mix equal parts water and store bought vegetable broth. In the liquids, I like to add lemongrass, lime leaves, garlic, ginger, white onion, and a thai chili pepper. All of these ingredients are roughly chopped, so the broth can be enhanced with their flavors. Once the broth is ready, I strain the pieces out and discard them. If you want to leave the lime leaves in for some extra tang, that’s totally fine! The last step would be to add in the miso paste before you are ready for the other ingredients!

My Favorite Toppings

When the broth is ready, you can add in the carrots and bok choy. I really love leaving this noodle soup simple, because it’s one of those recipes that comforts you. Think of this as your Asian chicken noodle soup 😉 If you want to get fancier, you can always add some broccoli, mushrooms, tofu, and more! Lemongrass Noodle Soup
Clear noodles in a delicious & flavorful lemongrass broth!

INGREDIENTS

  • 4 oz rice noodles
  • 2 tsp sesame oil
  • 3 cup vegetable stock
  • 3 cup water
  • (2) 6 inch stalks lemongrass
  • 4 lime leaves
  • 4 cloves garlic (roughly chopped)
  • 1 inch piece ginger (roughly chopped)
  • 1 medium white onion (cubed)
  • 1 thai chili pepper (sliced in half, lengthwise)
  • 1 tbsp miso paste
  • 1 carrot (thinly sliced)
  • 4 stalks bok choy
  • 2 scallions (chopped)
  • 1 tbsp chili oil
  • 1 jalapeno (sliced)

INTRUCTIONS

  1. Cook the rice noodles per package instructions. Drain and mix the sesame oil into the noodles so they don’t stick. Set aside.
  2. Take the lemongrass and cut each 6 inch piece into thirds, and then cut each third lengthwise. When the stalks are open, they will release more flavor.
  3. Get a big pot and add your vegetable stock, water, lemongrass, lime leaves, garlic, ginger, white onion, and thai chili pepper.
  4. Let this boil on medium high heat for about 15-20 minutes, or until the broth is nice and fragrant.
  5. Strain the brain and add it back into the pot. Mix in the miso paste, followed by the carrots and bok choy. Cook for about 5 minutes.
  6. When the 5 minutes are up, take the pot off of the heat.
  7. Add noodles into your bowls, pour broth over your noodles, and top off with some scallions, chili oil, and sliced jalapeno.

NOTES

  • Making the noodles separately and adding them into the broth later is key. If you cook the noodles in the broth, it will eventually turn very starchy and change the flavor.
  • You can make big batches of the lemongrass soup part (minus carrot & bok choy) and freeze them! These are great to use throughout the winter after thawing them.
