Mini Buffalo Chickpea Sandwiches

Hi besties! Today we have some Mini Buffalo Chickpea Sandwiches up on the blog 🙂 These are really cute to serve as appetizers, or you can eat them for lunch / dinner, which isn’t too bad of an idea if you ask me! I love these sandwiches because they are so fun to look at, but mostly they are SO flavorful and packed with nutrition!
Making the Buffalo Chickpea Mixture
This buffalo chickpea mixture literally takes 10 minutes to make. including the chopping, rinsing, mixing, etc! It’s super flavorful, but I’m only using a few simple ingredients. You can buy store bought chickpeas, which is what I did for this recipe, or you can soak chickpeas overnight and use those the next day! I’m also using a bunch of dried herbs, because this recipe is meant to be a quick appetizer idea, but feel free to use fresh herbs if you have them laying around!
My Favorite Add-Ons
I like to keep the buffalo chickpea mixture as the highlight to the recipe, but for me, sandwiches always need to have crunch. We have some yummy romaine lettuce, as well as sliced tomatoes for texture. Feel free to add other toppings if you’d like, but these are my absolute favorite. Along with the veggies, I NEED to add some sauciness, so I made garlic aioli and drizzled it onto each sandwich! Check out my Simple Vegan Sandwiches, where I have the recipe for a yummy aioli!
Prepping in Advance / Storing for the Future
There’s nothing better than knowing that you can make a recipe in advance, and serve it or eat it in the future. The chickpea mixture is GREAT to make in advance, up to 2 nights before using. You can also chop up your lettuce and slice your tomatoes so they are ready for when you need to assemble these sandwiches. If you want to assemble these sandwiches the day of, add everything on besides the aioli and do a final drizzle right before you are about to serve. This will leave the sandwiches nice and fresh!
