Mushroom & Zucchini Stuffed Shells

Happy Hump Day folks! Today I’ll be sharing my Mushroom & Zucchini Stuffed Shells! They are so creamy and delicious, I promise this will be a staple in your weeknight dinners after you have one try 😉 I made a huge tray of these when I was testing out the recipe, and let me tell ya… my friends devoured it within minutes! Vibrant Green Sauce

Now, I’m sure you’re wondering how we get this beautiful green sauce coated all over the jumbo shells! The sauce is very easy to make, and you can prepare the first half of it in advance if you really want! It’s filled with oven charred poblano peppers, spinach, cilantro, jalapeno, and tons of garlic! You’ll need a food processor to mix everything up, but once that’s done, the best part is pretty much ready!

Mushroom & Zucchini Filling

I love a classic stuffed shell with spinach & ricotta, but today I needed to do something different. Since our sauce is so rich and already contains spinach, I figured we could use some vegetables that give a good texture to the dish. Mushrooms and zucchini pair so well together, and they are pretty good veggies to use as a “stuffing”. Of course we have some onion in there as well, along with all the good seasonings! This filling tastes delicious even on it’s own, so you can do more than just stuff it in shells!

Jumbo Pasta Shells

To be quite honest, I was going to make this into a lasagna instead of shells. I quickly changed my mind because I thought that the mushroom & zucchini filling would get too messy if it was in between layers of pasta. However, if you were to use other shapes like rigatoni, ziti, or even fusilli, I think this would be GREAT! Stuffed shells are perfect in my opinion because they hold the filling so well! Mushroom & Zucchini Stuffed Shells
Flavorful & sautéed veggies stuffed into shells and dressed with a green poblano sauce!

INGREDIENTS

Mushroom & Zucchini Filling

  • 1.5 tbsp oil
  • 2 cups zucchini (diced)
  • 1.5 cup mushroom (chopped )
  • 1.5 cup onion (diced)
  • 1 tbsp garlic powder
  • 2 tsp crushed red pepper flakes

Poblano & Spinach Sauce

  • 4 large poblano peppers
  • 8 cloves garlic
  • 1 cup spinach
  • 1 jalapeno
  • 1/2 cup cilantro
  • 1/4 cup vegetable broth
  • 4 tbsp unsalted butter
  • 4 tbsp all purpose flour
  • 3 cups milk
  • 1 cup mozzarella cheese
  • 1/2 cup romano cheese

Other

  • 16 jumbo pasta shells
  • 1 red serrano pepper
  • 2 cups mozzarella cheese

INTRUCTIONS

Prep

  1. Take your shells and cook them to al dente. Once they are done, drain and drizzle some oil on them so they don’t stick. Set aside.
  2. Turn your oven to broil. Put your poblano peppers onto a baking sheet and broil them until charred (about 2 minutes on each side).
  3. As soon as the poblanos are done, add them to a large plastic bag and seal it shut so all of the moisture gets trapped inside Make the filling in the meantime.

Mushroom & Zucchini Filling

  1. Add oil to a large pan on medium heat. Throw in your zucchini & crushed red pepper flakes, and let it start cooking. After 2 minutes, add in your mushrooms and onion.
  2. Add some salt and black pepper per taste, followed by the garlic powder. Let all the veggies cook down until fork tender, and put into a bowl and set aside. Save the pan for the sauce.

Poblano & Spinach Sauce

  1. Remove the poblanos from the plastic bag. Discard all of the black, charred skin. It should be very easy to peal off now. Cut off the stems and add to the food processor.
  2. To your food processor, also add the garlic cloves, spinach, jalapeno, cilantro, vegetable broth, and salt per taste. Blend until everything is broken down and as smooth as possible. The resemblance should be similar to chutney.
  3. Now, take the pan that you used for your mushroom & zucchini filling. Add butter to the pan, and make sure it’s on medium heat.
  4. When the butter is melted, add in the flour and immediately start mixing until it looks like a thick paste. When it starts bubbling, the flour is cooked down and you can add in your milk.
  5. Keep stirring for 2-3 minutes, and you will notice it getting thicker. Add in your mozzarella and romano cheese, mix well, and then add in your green mixture.
  6. Mix everything well until the sauce is green and bubbly. Turn off heat.

Assembling Shells

  1. Pre-heat oven to 400° F.
  2. Take your baking pan and add a thick layer of the green sauce.
  3. Take each shell and fill it up with about 2 tbsp of the mushroom & zucchini filling. Add it to the pan and repeat the process.
  4. Pour your sauce over the shells, followed by the mozzarella cheese.
  5. If you like it spicy, add sliced serrano peppers on top. Cover the baking pan with foil and pop into the oven.
  6. After 30 minutes or so, your cheese should be melted. Remove the foil and turn the oven onto broil. Broil the shells until the top is golden brown.
  7. Remove from oven and let them cool for about 5 minutes & serve!

NOTES

  • This recipe makes a little extra sauce. If you do not want it to be too saucy, you can save the remainder of the sauce in a jar. It’s really good to add to leftover shells because they will soak up the sauce if they sit in the fridge for a couple of days.
  • This green sauce is pretty thick and creamy, so if you like thinner sauces, add more vegetable broth into your green mixture when mixing everything in the food processor. You can also save some pasta water and add it to your sauce.
