One Pot Tortellini Soup

What’s your favorite season? Mine for sure is soup season. There’s nothing better than curling up on the couch with a warm bowl of ANYTHING. And for me, that’s ONE POT Tortellini Soup!!

If it has pasta, I’m all ears. I love cheese filled tortellini with a spicy red sauce, so I figured, why not just turn it into a soup?  And why not just add some carrots and spinach in it? And also… why not share it with you guys?!

I promise that you guys are going to be really happy with this.  It’s made in 30-35 minutes, uses all fresh ingredients, and kids/picky eaters are bound to be happy.  My recipe tells you to add the tortellini into the soup directly to cook, but if you plan on storing this in the fridge for a day or two, cook the tortellini on the side, as needed.

Lucky for you, this recipe requires one pot. One. Freaking Pot. Sooo, cleaning up won’t be a challenge, and you’ll be out of the kitchen very shortly after eating it 🙂 Use any sort of pasta or even ravioli if you already have something else laying around the house! Eat it with a side of crackers or toasted bread and you have yourselves a full meal! Hope you enjoy my One Pot Tortellini Soup friends!! ♥

One Pot Tortellini Soup

INGREDIENTS

  • 1 tbsp butter (unsalted)
  • 1 small carrot (diced)
  • 1 small white onion (diced)
  • 2 tomatoes (diced)
  • 4 cloves garlic (minced)
  • 1 jalapeno (diced)
  • 1 tbsp italian seasoning
  • 1 tsp garlic powder
  • 1 tsp crushed red pepper flakes
  • 2 cups vegetable stock
  • 1 bay leaf
  • 2 cups spinach
  • 3 cups tortellini (frozen)

INTRUCTIONS

  1. In a medium pot, warm up the butter on medium heat.  Add carrots and let them cook for 2-3 minutes.  Add salt/black pepper per taste.
  2. Add in the onion, tomato, garlic and jalapeno and mix.  Throw in the italian seasoning, garlic powder and crushed red pepper flakes.  Let this cook for about 1-2 minutes, stirring every 20 seconds.
  3. Pour in your vegetable stock and 2 cups of water.  Then throw in the bay leaf and let this cook for 10 minutes.
  4. After 10 minutes, add in the spinach, give it a mix, and then add in the tortellini and let it cook until al dente. (Check package instructions.)
  5. Turn heat off once the tortellini is cooked and serve with a side of bread or crackers!
