Pesto & Burrata Flatbread

I’m all for cozy foods that are quick to make, especially in the winter! Pesto & Burrata Flatbread is so good because I’m using all store bought ingredients, but putting them together to make a delicious meal! These flatbreads come together in under 20 minutes, which is the the beauty of this recipe. Follow along so you can make them for yourselves this weekend!

My Favorite Pesto

I recently came across Grilled Vegetable Pesto and I was very intrigued to try it. My grocery store was out of sun-dried tomato pesto, so I figured this would be the next best thing. Let me tell you… it was delicious! It’s packed with flavor, so you don’t really need to add too many ingredients other than spinach and cheese! If you can’t find grilled vegetable pesto or sun-dried tomato pesto, you can always use a regular version! Be sure to add a thick layer on so it gets creamy and saucy with the burrata!

Flatbread or Naan

I am a sucker for naan pizza, which is essentially what this is. In this recipe, I mention that you can use flatbread or naan. I’m using Garlic Naan from Atoria’s Family Bakery, which is fluffy and so fresh. If you want your flatbread or naan to be on  the crispier side, be sure to toast it in the oven or on a pan before starting the steps. A nice crunch is usually what I prefer anyways! 😉

Other Toppings That Taste Great!

Toppings are unlimited, as I’m sure you already know! You can add jalapenos, garlic, fresh tomato slices, or even meat! You can even turn this into a breakfast flatbread and crack an egg on it 🙂 The combination of pesto and burrata honestly go with everything, and flatbreads / naan are meant to be LOADED! Pesto & Burrata Flatbread
A mini pizza to share with a loved one!

INGREDIENTS

  • 2 flatbreads (or naan)
  • 1/2 cup pesto (I used vegetable pesto)
  • 1/2 cup spinach
  • 1/4 cup parmesan cheese
  • 2 large burrata
  • basil or parsley (chopped)
  • crushed red pepper flakes

INTRUCTIONS

  1. Preheat your oven to 350° F.
  2. Place your flatbread or naan on a baking sheet. Evenly divide the pesto and spread it on to each.
  3. Add spinach, followed by the parmesan cheese.
  4. Open up the burrata (with your hands or you can cut it into pieces) and place it right in the middle of your flatbread or naan. Try to spread it out as much as you can so it covers as much as possible.
  5. Sprinkle some salt, black pepper, and crushed red pepper flakes.
  6. Put it into the oven for about 10 minutes, and then broil for another 3-5 minutes, or until the top is melted and bubbly!
  7. Garnish with basil or parsley, and enjoy!

NOTES

  • You can use any type of pesto that you like. I used store bought vegetable pesto! Sundried tomato pesto would taste delicious too.
  • If you want the bottom of the flatbread or naan to be crunchier, you can always toast it first before all of the steps.
