Pesto Tomatoes on Cheesy Garlic Toasts

Today I’m sharing my Pesto Tomatoes on Cheesy Garlic Toasts! This is an appetizer that you will be making on repeat all summer long! I love fresh mozzarella, and come spring / summer, it’s my favorite because you can eat it cold or warm! It’s the perfect little snack to munch on with wine, and great to serve if you have guests over! Below I’m listing some helpful tips for you when making these delicious toasts!

My Favorite Bread to use

These toasts are essentially mini crostini which I always get from my local grocery store. I go to the bakery section and pick out a fresh loaf of French bread, and they slice it up for me right there! It’s amazing and makes prep time so much easier for me because then I won’t have to cut or… or end up with uneven slices lol! If you want to make this with other bread, you can always use ciabatta or even sour dough, which are two of my personal favorites!

Finding the Best Cheese for these Toasts

It goes without saying that mozzarella cheese works so well with this recipe. Mozzarella in the summer, with tomatoes, is heavenly and such a perfect little snack to munch on. Galbani Mozzarella is my favorite brand because they have such fresh quality ingredients, and they also have pre-sliced logs, which once again, makes life all that easier 🙂 If you don’t have fresh mozzarella and you want to use the shredded kind, this recipe can definitely be adapted to that! Pesto with Tomatoes

I’ve been seeing pesto A LOT recently, and it’s honestly been added to so many of my meals because a little bit of that fresh herby flavor goes such a long way. This recipe is meant to be quick and easy, so I buy the store bought stuff. Making pesto at home is super easy, so I’ll definitely share that recipe with you guys soon. The pesto adds all of the best flavors… garlic, salt, herbs, cheese. It’s just so, so good.

Pesto Tomatoes on Cheesy Garlic Toasts
A cheesy garlic bread and bruschetta mix that you'll love!

INGREDIENTS

  • 1/4 cup pesto
  • 16 cherry tomatoes
  • 1 tsp crushed red pepper flakes
  • 2 cloves garlic (thinly sliced)
  • 8 slices small toast (crostini)
  • 8 slices fresh mozzarella
  • 1 handful fresh basil leaves

INTRUCTIONS

  1. Heat up a pan on medium heat. Add your pesto and let it warm up. Then add in your crushed red pepper flakes and cherry tomatoes.
  2. Give it a mix and close the lid. Mix occasionally every couple of minutes. When the tomatoes start to soften, use the flat part of your spoon or spatula to press on them. The tomatoes will be nice and blistered, and they will release a little bit of juice. Once the tomatoes are cooked and soft, turn the heat off.
  3. Preheat oven to 375° F.
  4. Line your toasts on a baking sheet. Drizzle with olive oil, and evenly add the garlic slices onto each toast.
  5. Then add your slices of mozzarella and pop into the oven. Let the toasts cook for about 3-4 minutes, and then put on broil to get the top nice and melted.
  6. Once the cheese is all melted, take your toasts out of the oven and add fresh basil to each piece. (be generous with the basil!)
  7. Top each toast off with the pesto tomatoes, sprinkle some more crushed red pepper if desired, and serve!
