Maggi Masala Fried Rice

Ingredients

  • 2 tbsp oil
  • 6 cloves garlic thinly sliced
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 pinch hing (asafetida)
  • 3/4 cup bell pepper diced
  • 1/4 cup red onion diced
  • 1/2 tomato diced
  • 1 serrano pepper diced
  • 1 tbsp ginger finely chopped
  • 1 cup cooked rice 1-2 days old works best
  • 2 packets maggi magic masala
  • 1/2 tsp cayenne pepper
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala

Instructions

  • Turn your pan on medium low heat. Add oil and wait for it to heat up.
  • Add in the garlic, followed by the crushed red pepper flakes, mustard seeds, cumin seeds and hing (asafetida).
  • After 30 seconds or so, add in the bell pepper, red onion, tomato, serrano pepper, and ginger. Let everything cook and soften up for about 2 minutes. Add salt & black pepper to taste.
  • Add in your cooked rice, both maggi magic masala packets, cayenne pepper, turmeric, and garam masala. Then mix everything up so all of the flavors combine with the rice.
  • When the rice is coated with the veggies and all spices, it's ready to serve!
  • Garnish with your favorite herbs and serve with a side of plain yogurt!

Notes

  • Using 1-2 day old rice is best for any fried rice recipe, especially this one!
  • I bought the Maggi Magic Masala packets at my local Indian grocery store, but if you can't find them, you can always use the regular packets of masala that come in the maggi noodles. 1 packet of the Maggi Magic Masala equals about 2 packets from the maggi noodles.
