Mom's Spicy Papdi No Lot

Spicy & steamed rice flour dough! One of my favorites growing up!

Ingredients

  • 5 cups water
  • 1 tbsp cumin seeds
  • 1/2 tbsp carom seeds
  • 8 Thai chili peppers blended
  • 2 serrano peppers blended
  • 4 large jalapenos blended
  • 1.5 tbsp salt
  • 3/4 tsp baking soda
  • 2 cups rice flour
  • 1/2 tsp cinnamon powder
  • 1 tsp cloves powder
  • 1 tsp black pepper
  • 1/4 tbsp asafetida (hing)

Instructions

  • Add your water in a pot to boil.
  • While the water is boiling, take your cumin seeds and carom seeds and roughly grind them with a mortar and pestle. If you don't have one, you can roughly chop in a small food processor (or skip this step all together).
  • Also blend your Thai chilies, jalapeno, and serrano peppers together.
  • Once the water comes to a boil, add in the cumin and carom seeds and let this boil for a minute. Then add in the peppers, salt, and baking soda. Let this boil for another 2-3 minutes.
  • In the meantime, add your rice flour, cinnamon powder, cloves powder, black pepper, and hing into another LARGE bowl. Mix well.
  • After the 3 minutes are up for your water, pour the water into the flour mixture and immediately start stirring it with a large wooden spoon. Keep stirring fast until all of the clumps have gone away.
  • Steam the dough for about 15-20 minutes. Once it's steamed, drizzle olive oil and methi masala and enjoy!

Notes

  • You can use any brand rice flour that you'd like, but our personal favorite to use is the Deep brand.
  • This recipe is SPICY. Be sure to remove seeds in peppers or reduce the number of peppers if you do not want to add too much heat.
