Take your pie crust out of the fridge and let it thaw for at least 2 hours before unfolding it.
When it's ready, unfold and set aside.
Preheated oven to 400 degrees Fahrenheit.
Mix together the strawberries, honey, granulated sugar, vanilla extract, and corn starch.
Pour the strawberries right into the center of the pie crust.
Fold the crust along the perimeter, each fold overlapping the previous one.
Beat your egg and then add a light layer of egg wash along the outer folded edge.
On a baking tray lined with parchment paper, place your galette and bake it in the oven for 25 minutes, or until it is completely golden brown.
Take out of the oven and let it rest for about 5 minutes.
Add a scoop of your favorite ice cream, garnish with some powdered sugar, slice up and serve!
