Strawberry Galette

Happy Galentine’s Day my loves!!! Today is all about us girls 😉 I’ve honestly never celebrated a REAL Valentine’s Day before, so for me, Galentine’s Day is the way to go.  And what better way than with a perfect Strawberry Galette?

When I think about spending time with my girl friends, it’s not your typical pillow fights and wine nights. Well… I take that back. There’s almost ALWAYS wine 😉 But along with that, my friends and I have a really big sweet tooth. Now, most of you know that I don’t bake often because it’s a little too precise for me. However, this recipe doesn’t require many ingredients and measuring them to the T. That’s why I like it so much- it’s quick, easy, and DELICIOUS!

This Strawberry Galette is the perfect Galentine’s Day treat for you and your girls! There’s a slice of delish for everyone, and best of all, you can top it off with a large scoop of ice cream and not even feel guilty. After all, you’re eating a STRAWBERRY Galette and most likely drinking wine. Always proud to say that I’ll be having a huge serving of fruit today!

Strawberry Galette

servings:4 people

Ingredients

  • 1 refrigerated Pillsbury circle pie crust
  • 16-18 strawberries (sliced)
  • 1/4 cup honey
  • 1/4 cup granulated sugar
  • 1 tsp corn starch
  • 1 tsp vanilla extract
  • 1 egg
  • 1 large scoop ice cream
  • powdered sugar (to garnish)

Instructions
 

  • Take your pie crust out of the fridge and let it thaw for at least 2 hours before unfolding it.
  • When it's ready, unfold and set aside.
  • Preheated oven to 400 degrees Fahrenheit.
  • Mix together the strawberries, honey, granulated sugar, vanilla extract, and corn starch.
  • Pour the strawberries right into the center of the pie crust.
  • Fold the crust along the perimeter, each fold overlapping the previous one.
  • Beat your egg and then add a light layer of egg wash along the outer folded edge.
  • On a baking tray lined with parchment paper, place your galette and bake it in the oven for 25 minutes, or until it is completely golden brown.
  • Take out of the oven and let it rest for about 5 minutes.
  • Add a scoop of your favorite ice cream, garnish with some powdered sugar, slice up and serve!
