Pumpkin Spice Pop Tarts

Hello friends! Pumpkin spice season is hardcore in effect right now, so I need to share my Pumpkin Spice Pop Tarts with you! I am a HUGE fan of pop tarts and any sort of pastry, so I promise you when I say that this recipe is DELISH. Thanksgiving this year is going to be a little different than most years, so let’s do our best to keep it as tasty as possible!

Pumpkin Pie vs. Pumpkin Spice Pop Tarts

I’m probably going to get so much hate for this, but I actually prefer these over pumpkin pies. I mean – I LOVE a good pumpkin pie, but there are usually like 10 of them at Thanksgiving dinners. Making these Pumpkin Spice Pop Tarts changes things up a bit, and they are so adorable!

Pie Crust

These pop tarts are made using Pillsbury Pie Crust, but you can totally make pie crust at home if you want it to be less semi-homemade. I am not the best when it comes to doughs, so I stick to the store bought ones lol. I’ve been making pop tarts for years now, and store bought pie crust is literally so easy. How long will these last for?

Since these are made at home and super fresh, I would recommend eating them within a week. Make sure you keep them stored in an air tight container, and you can pop them in the toaster to warm up when you want!

Pumpkin Spice Pop Tarts
A simple and easy recipe for Thanksgiving this year!

INGREDIENTS

Filling

  • 1/2 cup pumpkin puree
  • 3 tbsp light brown sugar
  • 1/2 tsp pumpkin spice
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg

Pumpkin Spice Glaze

  • 1/2 cup confectioners sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp pumpkin spice
  • 3 tbsp milk

Other

  • (2) 14 oz. pie crusts
  • 1 egg

INTRUCTIONS

  1. Be sure to have your pie crusts out of the fridge and sitting at room temperature.
  2. Take your pumpkin puree, brown sugar, pumpkin spice, cinnamon, and nutmeg, and mix it well in a bowl. Set to the side.
  3. Preheat oven to 350 degrees Fahrenheit.
  4. Unroll your pie crusts. Using a rolling pin, try to roll over it so that the pie crust is about 1/8 inch thick.
  5. Take your favorite cookie cutter or use a ruler to cut out even rectangles. One pie crust should be able to make about 4 medium sized pop tarts. You can always combine the scraps and re-roll the dough to cut out shapes again.
  6. Take even amounts of your filling and place them on half of the rectangles (or the shape you are using).
  7. Take the other half of the rectangles or shape and close the pop tart. Take a fork and seal each edge.
  8. Once your pop tarts are closed, beat your egg and brush a thin layer on each pop tart so it gets golden brown when baking.
  9. Pop them in the oven and let them start cooking. They should take about 20 minutes depending on your oven, so check them periodically starting at the 15 minute mark.
  10. Once the pop tarts are done, take them out of the oven and place on a baking rack to cool.
  11. To make your glaze, simply mix the Pumpkin Spice Glaze ingredients together. If this is too thick, add a little bit more milk until you get a nice consistency.
  12. When the pop tarts are completely cooled down, drizzle the glaze all over.
  13. You can decorate them by immediately adding sprinkles before the glaze turns hard!

NOTES

  • These will be good for up to 1 week. Be sure to keep them in an air tight container.
  • If eating the next day, pop them in the toaster to warm up a bit!
