Savory Waffle & Egg Salad Sandwich

Hello everyone! I was hardcore craving a good egg salad the past few days, so I wanted to share a recipe that will leave your mouths watering. This perfect lunchtime sandwich is made under 20 minutes, pairs beautifully with a savory horseradish and chive waffle, and uses just the right amount of Colman’s Mustard!
I generally don’t eat egg salad when I go out because I’m not a fan of my food being drenched in mayonnaise, and I know that a lot of people will agree with me on that one! So in this recipe, I use vegan mayonnaise because it just feels lighter.
In my opinion, egg salad is incomplete without some fresh additions, so I like to add celery, tomatoes, onions & chives! It makes the whole dish pop, not to mention it just tastes more flavorful. However, the key ingredient to a GOOD egg salad is mustard. Colman’s Mustard is so flavorful and compliments my recipe so well. You can tell how much heat it has just by a spoonful. Aside from this recipe, Colman’s is a brand that tastes good with just about anything. I LOVE pretzels, and dipping pretzels into their mustard is a game changer. They also have a mustard rub, which would go great if you mix it into a salad dressing even used on tofu.
Since my recipes in December always end up being holiday themed, I was going to use pumpernickel bread for the sandwich because they always have fresh loafs this time of the year. BUT, I liked the idea of savory waffles more. I love the combo of mustard and horseradish in egg salad, but since Colman’s already has a kick to it, I decided to add horseradish cheese directly into the waffle batter!
Like most of my recipes, this one comes with many substitution possibilities. If you don’t have access to vegan mayonnaise, get the regular kind if you like you! If horseradish cheese is too strong for your taste, cheddar is the next best option for your savory waffles. Feel free to omit the waffle as a whole and eat this as a wrap!
