Spanakopita Pinwheels

A modern twist to a classic Greek Spinach Pie! Spanakopita Pinwheels are so much fun to make and super enjoyable!

INGREDIENTS

1 tbsp oil

6 cups fresh spinach

1 medium white onion, diced small

2 jalapenos, diced small

8 cloves garlic, minced

1/4 cup dill, finely chopped

1/4 cup parsley, finely chopped

2 tsp crushed red pepper flakes

1 egg

1/2 cup feta cheese, crumbled

1 puff pastry sheet, thawed

INTRUCTIONS

  1. Preheat oven to 400 degrees F.
  2. Add oil to a pan. Then add in the spinach, onion, jalapeno and garlic.
  3. When the spinach is almost wilted, add in the dill, parsley, crushed red pepper, and salt + black pepper per taste.
  4. Crack an egg and whisk it. Add egg wash all over the side of the puff pastry sheet that you will be putting your filling on.
  5. Evenly spread the spinach mixture all over the puff pastry sheet, followed by the crumbled feta.
  6. Roll the sheet from the bottom up until it looks like a log.
  7. Us a very sharp knife and start cutting the pinwheels into 3/4-inch slices.
  8. Place on parchment paper and bake for about 20 minutes, or until the pastry is flaky and golden brown.
  9. Serve with your favorite dip or hot sauce!
