Sweet Potato, Black Bean & Quinoa Burgers

HAPPY almost Memorial Day Weekend, loves! This is that time of the year where we take out our patio furniture and our grills and start having people over for food and drinks! I love the beginning of summer, it always reminds me of all the fun times I had growing up! But, on to the main topic over here…. if you guys need a new burger recipe for this weekend, you must try my Sweet Potato, Black Bean & Quinoa Burgers!!

Sweet Potatoes vs. Regular Potatoes

If you want to use regular potatoes, you most definitely can. I think that sweet potatoes are WAY better for this recipe because the combination of sweet potatoes + thai chili peppers is my absolute favorite. I have not tested out a recipe using regular potatoes, so I’m not sure exactly which ones to use. I sometimes find it tricky because certain potatoes don’t do well when mashing up. Just stick to sweet potatoes, I promise you will love it 😉

The BEST Cheese for the Burgers

I recently starting buying the Black Bear Buffalo Cheddar Cheese, and it is the bomb.com you guys. If you live near a Shop Rite, you must go there and get the pre-sliced packets from their deli. I am hooked to this flavor because it’s ACTUALLY spicy. That’s why I think this brand cheese goes really well with the sweet potato patties! The combination of sweet and spicy is delicious!

Prepping Burgers in Advance

When entertaining guests, please do not spend any time making these burgers while they are there. I am a huge advocate of prepping in advance so you can enjoy your company. Everything can be done a day or two in advance, so use that opportunity to prep beforehand, so all you have to do is form your patties and start cooking when your guests are over. It will make your life so much easier, and I promise the burgers will still taste extremely fresh! Sweet Potato, Black Bean & Quinoa Burgers
The EASIEST homemade burger recipe that is perfect for Memorial Day Weekend!

INGREDIENTS

Sweet Potato, Black Bean & Quinoa Patty

  • 2 large sweet potatoes
  • 2 cups black beans (roughly mashed)
  • 1 cup cooked quinoa
  • 2 tsp chili powder
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • 6 thai chili’s (or jalapenos, minced)
  • 1 cup breadcrumbs

Toppings / Other

  • 4 burger buns
  • mayo
  • lettuce
  • cheese
  • tomato
  • onion
  • hot sauce

INTRUCTIONS

  1. Preheat your oven to 400° F. Cut both of your sweet potatoes in half, lengthwise, and rub olive oil on both sides. On a foil lined baking tray, place the inside half down and bake in the oven for about 30 minutes, or until fork tender.
  2. When the sweet potatoes are done, remove skin and add to bowl. Using or a fork (or your hands), roughly mash the sweet potato. Then add in the rest of your patty ingredients and mix everything together. Add salt if needed.
  3. Divide the mixture into 4 parts and form your patties. Brush some olive oil on both sides because it’s time to cook them!

Cooking on the stovetop

  1. Turn your heat to medium, and place your oil brushed patties on the pan. Let the first side cook for at least 5 minutes before flipping it to the next side. Once your patties have some color to them (your preference), turn the heat off, add your cheese and cover the pan with a lid so the cheese can melt.

Cooking on the grill

  1. These patties will still need to start off on the stovetop. Take your oil brushed patties and cook them on medium heat for about 2-3 minutes on each side. As soon as you see them holding their shape, you can transfer them to your grill. Grill on both sides until you see a char, and then place your cheese on top!

Assembling the burgers

  1. You can add any fillings that you want! I suggested my favorites in the ingredients. I love to add a little bit of vegan mayo on both sides of the bun, and then layer it on with lettuce, the patty + cheese, tomato, onion, and a drizzle of hot sauce!

NOTES

  • To save time, you can always make the sweet potatoes a day or two in advance, and store them in the fridge before you make the patties. OR, you can also make the patty mixture and store it in the fridge.
  • I’ve tested this recipe on a stovetop and on the grill, and my personal preference is to finish it off on the grill. It tastes SO much better than way!!
  • You can freeze these patties if you cook them half way on the stovetop and then put them in a container. Make sure each layer is lined with wax paper so the patties don’t get stuck to each other.
