Crunchy Fajita Taco Sliders

Hello friends! Today on the blog we have some yummy Crunchy Fajita Taco Sliders! I’m sure you already know this, but I am obsessed with Mexican food. I can pretty much eat tacos every day of my life, but these are even better than tacos. They are FAJITA TACOS, meaning they have the goodness from tacos, but also fajita flavors 😉

Taco Slider Shells

If you’re wondering where I got these mini slider shells from, I got you covered. Head over to Walmart, where you can find boxes of them! I was so excited when I saw them, because I feel like you usually only see soft tacos that are this small. I am a huge crunchy taco fan, so I had to pick up a few boxes. Honestly, they’re the perfect size to serve as appetizers, and the shells actually hold VERY well. They don’t crumble or break when you try to stuff them, which is a huge plus!!

Black Beans or Pinto Beans

I feel like A LOT of my recipes used refried pinto beans, so I wanted to switch up these tacos and show you guys how to use black beans in the recipe! I actually preferred the black beans in this recipe because I think they go so well with fajitas! If you can’t find refried black beans at the grocery store, you can always get a regular can of black beans, mash then up with a fork, and then follow the instructions. If you prefer to use refried pinto beans, that’s also totally fine!

Tips / Suggestions

You can prep and make all of the filling in advance, which will leave a lot of time to do other things! Prepping is the hard part, but once that’s done, filling the tacos is effortless and actually kind of fun LOL! I definitely suggest making the beans, fajita veggies, and guac the morning of if you are on a time crunch. If you want to use meat, feel free to substitute the beans for meat! You can also use meatless meat crumbles, which is very popular amongst the vegans 😉 Either way, tacos will ALWAYS taste delicious! Crunchy Fajita Taco Sliders
Fajitas... but make them into crunchy sliders!

INGREDIENTS

  • 18 Ortega Mini Taco Slider Shells (toasted)
  • 1 cup assorted bell peppers (sliced)
  • 1/2 cup white onion (sliced)
  • 2 tbsp fajita seasoning
  • 1 16 oz can refried black beans
  • 2 tbsp taco seasoning
  • 1/4 cup salsa
  • 1 cup guacamole
  • 1 cup cotija cheese

INTRUCTIONS

  1. Toast your mini taco slider shells and put them to the side.
  2. Take your oil and add it to a pan & turn to medium heat. Once heated, add in your sliced bell pepper and onion, followed by the fajita seasoning.
  3. Let the peppers and onions cook for about 3 minutes, or until slightly smoky and charred. Remove from pan and put into a bowl.
  4. In the same pan, add some more oil and then add in your refried black beans, followed by the taco seasoning and salsa.
  5. When the beans are smooth and all of the salsa and seasoning is mixed well, you can remove from heat and start to assemble the tacos!
  6. First add some black beans to each slider shell, followed by some of the fajita peppers & onions. Add some guacamole, and some cotija cheese to top it off!
  7. Serve immediately and enjoy!
