Oaxaca Cheese Flatbread

Let’s transport ourselves to Oaxaca, Mexico 😉 Just kidding. This delectable dish is a fusion of rich flavors and textures, showcasing the signature cheese of the region – Oaxaca cheese. With its stretchy, melty goodness, Oaxaca cheese takes center stage in this delicious flatbread, creating flavors that you will want on repeat! Oaxaca Cheese Flatbread is going to be your weekly staple now!

To start off, lets gather our ingredients. You’ll need flatbread as your base, which you can either prepare from scratch or conveniently purchase from your local store. I love the Stonefire brand. Next, you’ll need a generous layer of refried black beans. I make these with bell peppers, onions, garlic, and taco seasoning. Next up is the sauce, which is any red sauce of your liking and then tomatoes. Finally, add a generous amount of Oaxaca cheese, known for its mild, buttery flavor and unique stringy texture.

Oaxaca Cheese Flatbread

Mexican string cheese is probably the best thing ever!!

Ingredients

Flatbread

  • 14 oz flatbread
  • 2 cups refried black beans
  • 1/2 cup red enchilada sauce (or taco sauce)
  • 2 roma tomatoes (sliced)
  • 6 oz Oaxaca cheese (about half of the ball (if using the Tropical brand) or just measure with your heart <3)
  • 1 jalapeno (sliced)
  • 3/4 cup Mexican blend cheese (shredded)

Garnish

  • 1 cup romaine lettuce (shredded thin)
  • Siete jalapeno sauce
  • green onions

Instructions
 

  • Preheat the oven to 370 degrees F. Once heated, pop in your flatbread for about 5 minutes, or until it starts to get a little crispy.
  • Remove the flatbread from the oven, and in this order, layer on the following ingredients: beans, sauce, tomatoes, Oaxaca cheese, jalapenos, and Mexican blend cheese.
  • Pop the flatbread back into the oven and let it bake for about 10-12 minutes, or until all of the cheese is melted!
  • Add your lettuce on top, drizzle with some Siete jalapeno sauce, and garnish with green onions.
Notes
  • You can use naan or regular pizza crust if you don’t have flatbread.
