Fajita Taco Bowls

Hi everyone! Today we have something extra yummy on the blog. Fajita Taco Bowls are a must have during your Mexican food nights! If you came here from my Instagram page, @chocolateandcheeseplease, then you already know it’s going to be SUPER flavorful 😉

As I was making this recipe, I was thinking about how we haven’t had fajitas on the menu in a LONG time. I mean, it’s been at least 10-15 years since we actually made them at home. But, as I was grilling these veggies, I finally understood why LOL. While we love a good charred veggie, the process can be very brutal on your nose. Be prepared for some smoke and lots of sneezes. But, I’m not complaining because they are just THAT good!

Aside from the veggies that are in my ingredient list, below are other great options to add in:

  • Mushrooms
  • Spinach
  • Broccoli
  • Zucchini
  • Carrots
  • Sweet Potato

I am using the Old El Paso Soft Tortilla Bowls but if you do not have access to them, you can use any medium sized tortilla! I like medium size for this recipe because the veggies are cut into strips, so you want to make sure that there is enough tortilla to fill all of the goodness 😉

Fajita Taco Bowls
Fajita Taco Bowls are a must have during your Mexican food nights!

INGREDIENTS

Fajita Veggies

  • 2 tbsp oil
  • 4 cloves garlic (minced)
  • 1/2 red bell pepper (sliced)
  • 1/2 green bell pepper (sliced)
  • 1/2 orange bell pepper (sliced)
  • 1/2 yellow bell pepper (sliced)
  • 1 large white onion (sliced)
  • 1-2 jalapenos (sliced)
  • 4 tbsp fajita seasoning
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp turmeric powder
  • 1/4 cup water

Black Beans

  • 1/2 tbsp oil
  • 15.5 oz black beans (drained and rinsed)
  • 1/2 cup salsa
  • 2 tbsp taco seasoning
  • 4 cloves garlic

Guacamole

  • 2 avocados (mashed)
  • 4 cloves garlic (finely chopped)
  • 1 jalapeno (finely chopped)
  • lime (to taste)
  • cilantro

Other

  • 8 soft tortilla bowls (or regular medium tortillas)
  • 2 cups cheddar cheese (shredded)
  • 2 scallions (chopped)
  • lime
  • lettuce (finely chopped)

INTRUCTIONS

Black Beans

  1. Warm up your oil in a pot on medium heat. Add in the garlic and sautee for a minute or so.
  2. Then, add in your salsa. Mix until it is competently combined with the garlic, and then add in your taco seasoning and salt to taste.
  3. Add in the beans and mix. If this is too dry for you, add some water or veggie stock if you have any open. Beans are up to your preference.

Guacamole

  1. Mix all of your guacamole ingredients together, add salt and lime per taste. Add cilantro if you like. Keep in fridge until ready to use with the avocado seeds.

Fajita Veggies

  1. Add your bell peppers, onion, and jalapeno to a large bowl. Add in the oil, fajita seasoning, paprika, cayenne pepper, turmeric powder, and salt to taste. Mix everything very well until all spices and oil are coating the veggies.
  2. Warm your pan on medium heat and add all of your veggies. Keep tossing every minute or so, and let them cook until they are soft and have a char on them.
  3. Add a tbsp of water every minute or so to help cook the veggies. When they are almost ready, add in the garlic and let it cook for about a minute and then take off of heat.

Assemble the Fajita Taco Bowls

  1. Take your tortilla bowls and add your beans, fajita veggies, lettuce, cheese, green onion, and lime if desired. You can also top off with hot sauce and sour cream.
  2. Serve immediately while hot!
