Charred Cauliflower & Red Pepper Tacos

If you’re looking for some healthy summertime recipes, I’m here to help! My Charred Cauliflower & Red Pepper Tacos are pretty low in calorie, and high in deliciousness 😉 I’m constantly seeing cauliflower taco recipes on the internet, so I wanted to make my own version… and they are pretty damn good if you ask me! I hope you guys enjoy this as much as I do!
Sheet Pan Cauliflower & Red Pepper
If you don’t want to turn your oven on for this recipe, you really don’t need to! I think it’s a lot easier to get veggies cooking separately if they are on a sheet, but you can always do this on the stove. To cook on the stove, you can follow the same steps, but add the bell pepper about 10 minutes after you add the cauliflower, since it’s softer in texture. You can even do this on the grill if you’re up for that!
Corn Tortillas vs. Flour Tortillas
I will forever love my flour tortillas more than corn tortillas, but when it comes down to eating “lighter” in the summer, I always go for corn because it’s a little healthier. If you want to use flour tortillas, this recipe will be just as good! If you want to eliminate the carbs completely, you can make the cauliflower and red pepper combo to add onto a bed of spinach or arugula!
Spicy Chimichurri Sauce
You may think it’s weird that chimichurri is considered a sauce, but it is, and it goes SO well with this flavor profile! I have the best recipe, and of course… it’s spicy 😉 My Spicy Chimichurri can be made in advance for this recipe, and once you’ve moved on, you can also use it for SO many other dishes. I love it for this recipe in particular because it goes really well with a mix of vegetables 🙂
