Air Fried Mexican Poppers

I’m not gonna lie, I am mildly addicted to jalapeno poppers… so when I made these Air Fried Mexican Poppers, I knew that you guys would love them too! You know I’m all about recipes that have a Mexican flare to them, and I’m so glad I made these because they are so easy and perfect for those quick snacks or party appetizers!

Favorite Types of Cheese

I am a firm believer that Jalapeno Poppers should have AT LEAST two types of cheese. Ideally, some sort of sharp cheddar, mixed with a flavored cream cheese. That’s exactly what I was going for over here with my recipe! I used a block of sharp cheddar and grated it at home, and went in with a store bought veggie cream cheese. You can use any type of cream cheese you want, so I think that’s the part where you can customize and go crazy 😉

Alternative to Spicy Peppers

My recipe says to discard the seeds of the jalapenos, but in all honestly, I mixed the seeds into the bean and cream cheese filling because you guys know I NEED my spice!!! If you want to make this extremely kid friendly, you can use small bell peppers, which are slightly sweet in flavor. They are already bite sized so they fit perfectly with this recipe.

Clearly I love my jalapeno poppers, which is apparent from all of the times that I’ve shared some fusion version of them! Air Fried Mexican Poppers
A STUFFED bean & double cheese jalapeno popper! So delicious ;)

INGREDIENTS

  • 5 large jalapenos (sliced in half, lengthwise )
  • 1/2 cup refried beans
  • 1/4 cup veggie cream cheese (or any kind you have)
  • 3/4 cup breadcrumbs
  • 1¼ cup cheddar cheese (shredded)

INTRUCTIONS

  1. Cut your jalapenos lengthwise with the stem on. Scoop out of the seeds of the jalapeno and discard or save them for a different recipe.
  2. Mix together your cream cheese and refried beans.
  3. Evenly stuff each jalapeno half with the bean and cheese mixture, and then top them off with a layer of shredded cheddar cheese.
  4. Sprinkle on the breadcrumbs, and set aside.
  5. Preheat your air fryer to 375°F and after 5 minutes, place your jalapenos inside. Drizzle some oil on each and let them cook for 5-7 minutes.
  6. As soon as the cheese is melted and the jalapenos get nice and soft, take them out of the air fryer.
  7. Serve with ranch or any mexican sauce!

NOTES

  • I love when the jalapenos have a slight crunch to them, so I do not pre-cook the jalapenos. If you them like them super soft, add the sliced jalapenos into the air fryer before stuffing them with anything for a few minutes. When they get soft, pause the air fryer, stuff the jalapenos, and then pop them back in until the cheese is melted.
  • If you don’t have an air fryer, you can bake them in the oven at the same temperature. Be sure to keep an eye on them, but they should be cooked in 10-12 minutes.
