Jalapeno Popper Grilled Cheese

For starters… Happy Cinco de Mayo! I know we aren’t celebrating the way that we normally would, but let’s take this opportunity to be grateful. We can still celebrate in the comfort of our homes because we are fortunate enough to have a roof over our heads, and we are fortunate enough to make some recipes that so many amazing food bloggers are providing!

Even though this is not a Mexican recipe, I think it still deserves to be eaten on Cinco de Mayo. My Jalapeno Popper Grilled Cheese is pretty much my favorite creation so far. And to be honest, I did my research. A jalapeno popper resembles a Mexican Chile Relleno, which is usually smothered in sauce, but basically is stuffed with cheese. So I won’t lie… this is a GREAT recipe for today 😉 Speaking of jalapeno poppers, I made a Naan Popper Pizza a while back and this is also one of those that you MUST try out!

Like any other recipe of mine, you know it’s going to go a little above and beyond with the spice. The lasan nu marchu can be omitted if you do not want to use it. In case you don’t have it and you want to make it at home, click here for a simple recipe that is very similar to how my family makes it. As another alternative, you can simply add some chili powder, cumin powder, and minced garlic to your cream cheese to get similar flavors.

Jalapeno Popper Grilled Cheese

servings:4 sandwiches

Ingredients

  • 1/2 cup cream cheese (any flavor, but I used onion and chive)
  • 1.5 – 2 tbsp lasan nu marchu (this goes per taste)
  • 2 jalapenos (sliced)
  • 1 cup cheddar cheese (shredded)
  • 8 slices bread (I used fresh rye from a bakery)
  • butter

Instructions
 

  • In a bowl, mix together your cream cheese and lasan nu marchu.
  • Add the cream cheese to one slice of bread, followed by the sliced jalapenos.
  • Next, add a generous layer of cheddar cheese, and close up the sandwich.
  • Turn your pan on medium low and add some butter to it. Once it's heated, put your grilled cheese on the pan
  • Add butter to the side that is up. Cover the grilled cheese for 1-2 minutes, and then flip to the other side.
  • Let the second side cook for 1-2 minutes, covered, and then take it off of the heat.
  • Cut in half and serve!
