Mini Apple Pies | Reeds Jewelers

‘Tis the season of pumpkin spice everything, comfort food for our hungry little summer bodies, and warm jewel tone colors that make life wonderful! Now, full disclaimer up ahead… I’ve talked about this before and I’ll say it again… I, chocolateandcheeseplease, am NOT a dessert blogger.  In fact, when it comes to sugar and sweet food, you can count me out (as far as making it).  However, if you need any help in eating it, feel free to invite me over 🙂

For me, baking is a concept very similar to rocket science- it makes no sense, and I pretty much suck at it.  How many cups of flour? 2 teaspoons of baking soda or is it baking powder? Is 1 pint of vanilla extract too much?  …see what I mean?  So when I tell you that these MINI APPLE PIES are CHOCOLATEANDCHEESEPLEASE easy, you best believe it. Trust me, I minimized it so much that you don’t even feel like you are baking.

I actually had such a wonderful day when I was creating this recipe for you.  The most beautiful package arrived at my doorstep.  The package was addressed to ‘chocolateandcheeseplease,’ so I knew it had to have been something good.  I gently opened the white packaging (just kidding, you know I tore it apart) and in it were 2 shiny blue rectangular boxes waiting to be ooh’d and ahh’d at by me.  I was so excited by the first box alone that I didn’t expect to fall even more in love with the next one.  I received two beautiful bracelets by Reeds Jewelers.  For those of you who don’t know much about Reeds, they are a family owned jewelry retailer that started off in North Carolina, but made their way into 13 different states, as of today.  I love Reeds because they have all of my personal favorites- Swarovski, Mikimoto, Tiffany, and even a lot of the high-end designers like David Yurman, Michele and Rolex.  There is such a variety of options to choose from, and they have the nicest pieces from each brand.  Their website is curated perfectly for you to pick out different rings, earrings, necklaces, bracelets and watches!

To be honest, sometimes I just prefer shopping for jewelry at stores like Reeds because all of the different brands are right in front of me.  It makes selecting pieces a lot easier and let’s be real – it’s just FUN. The pieces I received are perfect for me and really resemble my personal style.  I love love LOVE the emerald green bracelet because this is a staple color that I like to rock in the fall. I also have this beautiful green dress that I plan on wearing to my Christmas Part this year, so you KNOW this piece will be worn then! The clear stone bracelet is so cute and I’m also very excited about this one because of the details.  I think this will pair really well with my daily watch!  Most of my clothes are pastels/white and jewel tones/black.  Unfortunately, I’m not really into bright colors so BOTH of these bracelets will work well with my wardrobe, whether I’m planning a simple/casual day outfit or if I need to go to a work event/party wearing a cocktail dress!  And if you didn’t already know… these bracelets are the perfect accessory to baking my mini apple pies 😉

Mini Apple Pies

Ingredients

Filling

  • 2 granny smith apples (diced small)
  • 3/4 cup light brown sugar
  • 1/2 tbsp cinnamon powder
  • 3 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1 tsp lemon juice
  • 1 tbsp all purpose flour

Other

  • 1 tbsp raw sugar
  • 2 tsp almond milk
  • 2 ready made pie crust (14 oz)

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit. Add your butter to a small pot on medium heat.  Once melted, throw in all of your filling ingredients. 
  • Let the apples cook until fork tender, ~5-7 minutes on low heat. Set aside and let it cool.
  • Cut 3 inch circles out of the pie crust.  When there is no more space left to cut, knead the dough and use a rolling pin to get it thin enough to cut more circles.  Each pie crust should yield about 12 mini circles.
  • Add about 1-1.5 tsp of the apples into the center of each circle.  Fold in half and seal the sides with a fork.
  • Brush the top of each pie with almond milk.  Coat with a generous amount of cane sugar.
  • Bake on a tray with wax paper for 20-25 minutes, until the top is golden brown.
  • Let them cool for 10 minutes before serving!
