Cheesy Garam Masala Eggs

CHEESY GARAM MASALA EGGS are literally my ALL TIME FAVORITE post-gym meal! For me, eggs do not taste good with the whole “less is more” concept.  I don’t like them plain, I don’t like them dry & and I don’t like them non-cheesy.  I just d o n t. So, when I need to eat a healthy meal after I work out or when I feel like I just need to eat clean, I try to make eggs that have lots of flavor to them.  This recipe is honestly a very basic version of egg kheema, but I can never even try to replicate my dad’s version, so this version will have to suffice.  I’ve posted several Instagram stories on this and you guys have been asking me for quite some time for the recipe sooooo here we go!

Unlike kheema, I add a lot of spinach to my eggs because that’s just the best way to get ME to eat it.  It adds a pop of color to the dish, you get your vitamins in, and it obviously tastes good after you sauté it in some butter and garlic.  I use blended up peppers and add them to my eggs, as opposed to chopping them or slicing them.  I think it just tastes better because then you are not eating chunks of spicy peppers, but you have it distributed throughout the dish.  You will see a picture below on what I mean by “blended”.

Now… the key ingredient to this dish is the GARAM MASALA!  We use this spice blend in so many Indian dishes, however, it’s being incorporate into so many other cuisines, which I absolutely love.  I use a brand called “Rajah”, but I’ve also linked other brands / places where you can purchase it if you click here, here and here. For those of you who do not know what garam masala is, it’s basically the easiest spice blend to use because you get everything in one.  It makes things that are very bland (like eggs) and turns it into one big bowl of magic

As far as cheese goes, you know I’m putting that sh*t on everything. Sometimes I make a “Garam Masala Eggs Grilled Cheese” which is actually my go-to way of eating this.  You would just mix the cheese into the eggs like you do for this recipe, place your cheesy eggs in between two slices of bread, and let the sandwich get toasty on a pan.  If you AREN’T into the whole cheesy eggs situation (which I know is real life thing because my sister doesn’t like cheese in her eggs), you can always omit the cheese and be a healthy person.

Cheesy Garam Masala Eggs
This recipe is honestly a very basic version of egg kheema but better.

INGREDIENTS

  • 8 eggs
  • 2 tbsp sriracha
  • 1 small white onion (diced)
  • 4 tsp garam masala
  • 2 tsp cayenne pepper
  • 2 tsp turmeric powder
  • 8 cloves garlic (minced)
  • 4 thai chili peppers (chopped)
  • 4 cups spinach (washed and drained)
  • 2 tbsp butter
  • 1 cup mozzarella cheese (shredded)
  • 8 pieces of rye bread (sliced and toasted)

INTRUCTIONS

  1. Mix together your eggs, sriracha, onion, garam masala, cayenne pepper and turmeric powder.  Add salt and black pepper per taste.
  2. Warm butter on medium heat.  Add the minced garlic, thai chili peppers, and spinach to the pan.
  3. When spinach has wilted, pour the eggs into the pan.  Let them cook on medium heat until well done, or per your liking.
  4. When eggs are almost done, add cheese directly into the pan and mix the eggs.
  5. Eat eggs and toast separately or make sandwiches by evenly distributing the eggs onto 4 slices of the toasted bread, and topping it off with the other 4 slices.
