Chickpea Masala Quesadillas

If there’s one thing I can assure you, it’s that I can pretty much turn anything into a quesadilla. Got random ingredients? Throw them together, add some cheese, and BAM. There’s a delicious quesadilla without thinking twice! These Chickpea Masala Quesadillas came to mind when I saw a box of Deep Indian Kitchen Chickpea Masala at my grocery store. I knew that it would be perfect and go so well with tortillas and cheese!

Deep Indian Kitchen Chickpea Masala

The Chickpea Masala box comes frozen, and it’s pretty much ready to eat. All you have to do is pop it in the microwave per package instructions, and you have lunch or dinner within minutes. I’m really picky when it comes to frozen Indian food, because I’m sure everyone can agree that their own mom’s Indian cooking is the best. This box exceeded my expectations and I truly loved it. It’s great because you also get some spinach rice, which is extremely flavorful and makes it a complete meal! Filling up your Quesadilla

Yes, anything can go into a quesadilla because options are unlimited! In this quesadilla, we are using the Chickpea Masalas and the spinach rice, along with ricotta cheese and mozzarella cheese. I thought mild, white cheeses were the way to go, so we don’t take away flavor from the actual chickpeas and rice. You can eliminate the rice and eat it on the side, or you can go full on like I did and make 2 jumbo quesadillas with one box!

Dipping Options

If you’re a saucy person like I am, I’m sure you’re wondering what to dip this in. You can go the traditional route with salsa, guacamole, and sour cream. Or you can always add some more Indian touches and use green chutney, red garlic chutney, or sweet tamarind chutney.  There’s also several hot sauce options out there that would be amazing. My personal favorites are Cholula and Tapatio with ANY quesadillas!

Chickpea Masala Quesadillas
An easy store bought version of Chickpea Masala to make quesadillas!

INGREDIENTS

INTRUCTIONS

  1. Make your Chickpea Masala per package instructions.
  2. Once it’s ready, layer on the ricotta cheese to both tortillas.
  3. Next up, split the spinach rice and add on top of the ricotta cheese.
  4. Sprinkle with some mozzarella.
  5. Add the Chickpeas right on top, and then sprinkle with the rest of the mozzarella.
  6. Add some cooking oil or spray to your pan, turn on medium heat, fold up the quesadillas, and start heating up.
  7. Flip when one side is golden brown, and your cheese should be completely melted by the time the second side is golden brown.
  8. Serve with salsa, guacamole, or hot sauce!
