DIY Vegetarian Burrito Bowls

I’m so excited to share one of my favorite homemade Mexican dishes with you! I’ve mentioned several times that I am not the biggest fan of Chipotle.  I think their food is great, but I’m just really picky when it comes to Mexican food.  Homemade is always better in my opinon 🙂 That’s why I am now sharing with you…. my DIY VEGETARIAN BURRITO BOWLS!

For starters, I love burritos, but I hate the messiness that comes along with it.  Don’t get me wrong- if I’m home alone, you must understand that my hair will be up and my face will be covered in burrito goodness. But sometimes, I like to be a normal human and let my food be in my mouth, and not my face. That’s why burrito bowls are a little more practical for me.

I made these same exact bowls with some of my best friends a few weeks ago, and they were a HUGE hit. I also got a ton of requests to post the recipe- so I hope you guys enjoy! These burrito bowls are not just limited to the ingredients I used, so feel free to add in whatever else you have in the fridge! More importantly, please use your most favorite hot sauce, because my DIY Vegetarian Burrito Bowls are only worthy of the finest sauces in the land.  If you haven’t heard of Dave’s Gourmet, I highly recommend the Creamy Garlic Red Pepper sauce! It goes so well with just about anything 🙂

DIY Vegetarian Burrito Bowls

Ingredients

Seasoned Lime Rice

  • 1 cup rice
  • 2 tbsp taco seasoning
  • 2 tsp oil
  • 1/2 lime

Black Beans

  • 15.5 oz black beans
  • 2.5 tbsp taco seasoning
  • 1/4 tsp paprika
  • 1/4 tsp cayenne pepper
  • 5 cloves garlic (minced)
  • 1 jalapeno (diced)
  • lime

Veggie Taco Meat (Optional)

  • 12 oz Mexican Meatless Crumbles
  • 2 tsp oil
  • 1/4 cup salsa
  • lime

Other

  • 8 mini assorted bell peppers (sliced)
  • 2 tomatoes (diced)
  • 1 large red onion (diced)
  • 2 avocados (diced or mashed)
  • 1 cup pepper jack cheese (shredded)
  • lettuce

Instructions
 

Seasoned Lime Rice

  • Bring 2 cups of water to a boil in a pot. Add in your rice, taco seasoning, oil, and salt to taste. Mix well and cover the pot.  Occasionally stir. Once it is cooked, squeeze half of a lime over it and let it cool.

Black Beans

  • Warm up the black beans in a pot. Then add in the taco seasoning, paprika, cayenne pepper, garlic, jalapeno and lime.  Mix until all of is warmed through.

Veggie Taco Meat (Optional)

  • Warm up 2 tsp of oil on a pan.  Then add in the Mexican Meatless Crumble and break it up on the pan.  Add your salsa and lime (to taste), and mix well until everything is warmed through.

To Assemble

  • After you dice your avocado, add salt, black pepper and lime to taste.
  • In a bowl, add some rice, black beans, vegetarian taco meat, tomatoes, red onion, avocado, cheese, and lettuce if desired. 
  • Drizzle your favorite hot sauce on top and enjoy!
