Refried Bean & Cheese Enchiladas

This recipe is always requested every time I post enchiladas on my IG stories, so here you go! My Refried Bean & Cheese Enchiladas are super easy to make and they are a staple in my house. This dish takes me back to my childhood because when my mom made enchiladas for dinner, it was a PARTY!!

My Favorite Tortillas

Tortillas are always a sensitive topic for me because I am a HUGE fan of flour tortillas. I don’t care if corn tortillas are “healthier”… I need my flour ones! I always use the medium size Mission tortillas because they are perfectly pliable and I love the way they taste with enchiladas. As far as portions go, I eat 2 medium sized enchiladas, so if you have the large size, you will likely want to serve 1!

Inside of the Enchiladas

Of course these are Refried Bean & Cheese Enchiladas, but you can always substitute the refried beans for black beans! I love to mash and doctor up black beans, but there’s nothing like refried beans in enchiladas… it just hits different. If you want to add other sources of protein, you can always add seitan, vegan chorizo, or whatever meat you want!

The Best Toppings

I love a classic combo of diced bell peppers, spicy peppers, and scallions on top. In this recipe, I used habaneros, but you can always use sliced jalapenos, or even serranos! If you want to add other veggies on top, you can do mushrooms, or I’ve seen many people add black olives! Options are unlimited folks!! One thing that you guys cannot skip out on is a good Homemade Enchilada Sauce

Refried Bean & Cheese Enchiladas

An easy dinner to make for weeknights! This is a family favorite !

Ingredients

  • 4 medium flour tortillas
  • 1 cup refried beans
  • 2 cups Homemade Enchilada Sauce (and some extra for the inside)
  • 1.5 cup mexican cheese (shredded)
  • 2/3 cup bell peppers (finely diced)
  • 2 habaneros (sliced)
  • 2 scallions (diced)

Instructions
 

  • Preheat oven to 400 degrees F.
  • Take your tortillas and warm them up on an open flame. Let them slightly char.
  • Take 1/4 cup of beans and spread it generously on each tortilla. Add some Homemade Enchilada Sauce and a sprinkle of cheese as well.
  • Roll up your enchilada and begin to plate. Add a small layer of sauce before you put the enchiladas on the plate.
  • Take your sauce and pour all over enchiladas. Add cheese, bell peppers, habaneros, and scallions.
  • Bake in the oven for about 15 minutes, or until the cheese is nice and bubbly.
  • Serve with a side of Mexican rice or a simple salad!
Notes
  • We love to make these enchiladas on individual plates, but you can also make them in a large baking pan if you are serving for a party.
  • I love refried pinto beans in this recipe! However, you can always use black beans if that’s what you prefer.
