Papdi Salad

Hi guys! I know it’s been some time since I’ve shared a recipe with you, but I’ll have a ton of free time now so I wanted to get a few out. Since many of us are working from home for the next few weeks, I wanted to introduce a snack that I absolutely need every now and then… my Papdi Salad!

I know you’re probably wondering… papdi.. SALAD? Growing up, my mom would always make a version of this for us and she would throw in all of the veggies that she had in the house. It was a great way for us to eat a crunchy snack while getting some nutrients in.

When i’m working from home, I typically ALWAYS snack. And I always want salty + crunchy snacks. So this is probably the BEST option for me, and for you in the upcoming weeks! It’s also a great little snack to have when watching movies, or even if you are hosting friends for game night! Instead of peanuts and drinks, you can put out this beautiful little Papdi Salad 🙂

I toast my papdi in the toaster, but you can always roast it on the stove, microwave, or even fry it if you prefer. In this recipe I am using some peppers onion & tomato, but you can throw in ANYTHING. Broccoli, bell peppers, scallions, mango, or pomegranate arils for a burst of flavor 🙂

Papdi Salad
Papdi Salad is a great little snack to have when watching movies, or even if you are hosting friends for game night!

INGREDIENTS

  • 6-8 papdi
  • 1.5 tbsp olive oil
  • 1 small onion (diced small)
  • 1 small tomato (diced small)
  • 2 Serrano peppers (diced small)
  • 1/2 tsp cayenne (pepper)
  • 1 tbsp cilantro (finely chopped)

INTRUCTIONS

  1. Toast your papdi’s in the method you prefer. I toast mine in the toaster oven.
  2. Break the papdi’s into small pieces once they have cooled.
  3. Add in your olive oil, onion, tomato, serrano pepper, cayenne, cilantro, and salt to taste.
  4. Mix it up so everything is evenly coated. Scoop into bowls and serve immediately.
