Korean Kimchi Tofu Sliders

Back in the kitchen with a recipe that will make your mouths DROOL while looking at the pictures! These Korean Kimchi Tofu Sliders are my JAM these days. First of all, you cannot ever go wrong with Korean food. Second, tofu is a great source of protein for us vegetarians. And third, who could ever resist a perfect little slider?

Wait there’s also a fourth reason… and probably the best reason. I’m using the most DELICIOUS Spicy Kimchi, by Nasoya, that I could get my hands on! I honestly don’t know how to make kimchi at home, and I don’t think it would be too difficult if I tried. But why would I waste my time when I can have it readily available? Hehe. Have you heard of a lazy food blogger that likes to take shortcuts in the kitchen? Yea- that’s me.

I love the fact that Nasoya has so many different products, and I have been using them for YEARS and years now. This is actually a recipe of mine that I created a few years back, but I used a radicchio slaw.  This time around I decided that the Nasoya Kimchi would give my slaw a run for its money… which it SO did. They have several different flavors, but clearly I’m going to choose the one that is the spiciest!  I love that the kimchi stays crunchy and the container is PACKED with flavor. I mean, it just tastes so authentic which I absolutely love! Oh and did I mention that it’s also vegan? Yea…

If you want to make this recipe low carb, cut out the slider buns and eat it like a salad! You can put the tofu, kimchi & jalapenos on a bed of a spinach and make it super healthy and nutritious. It’s the perfect lunch in my opinion

Korean Kimchi Tofu Sliders

Ingredients

  • 3 tbsp soy sauce
  • 1 tbsp hoison
  • 1/2 tsp miso paste
  • 1 tbsp sriracha
  • 1 tbsp ginger (grated)
  • 1 tbsp light brown sugar
  • 4 cloves garlic (shredded)
  • 1 block tofu
  • spinach
  • sesame seeds
  • Nasoya Spicy Kimchi
  • 3 tbsp sesame oil
  • 2 jalapenos (sliced)
  • 8 slider buns

Instructions
 

  • Drain all of the water out of the tofu. Cut it into 8 squares by cutting it into 4 even pieces and then cutting those 4 pieces on the skinny side so it's a little flatter.
  • In a bowl, mix together your soy sauce, hoison, miso paste, sriracha, ginger, light brown sugar and garlic. Pour it all over your 8 tofu squares and let it soak in for about 15 minutes.
  • On medium heat, warm up your sesame oil. Then add in your tofu and lay flat. Let it heat on each side for 10 minutes. Try not to move it around too much. It's ok if your pan starts caramelizing at the bottom. That just means you will have more flavor!
  • Once both sides are done, sprinkle a desired amount of sesame seeds on the top side of your tofu.
  • Toast your buns and place a desired amount of spinach on the bottom bun.
  • Then add 1 piece of tofu on the spinach, a couple slices of jalapeno, and a spoon full of Nasoya's Spicy Kimchi. Close up the slider bun and enjoy!
