Pav Bhaji Burger

The weather is getting nicer and I’m finally ready to do some outdoor cooking! When it comes to grilling or making burgers, people often think that vegetarian’s don’t have good options. I’d like to say that’s false. I can make a MEAN veggie burger, but I can also make a delicious Pav Bhaji Burger that will basically end all burgers… until I create my next burger recipe lol.

I would always eat Pav Bhaji in a “sloppy joe” style, which I know most of you can relate to. This time, I wanted to make something that’s actually easy to eat, but essentially tastes exactly like Pav Bhaji. This burger may seem a little tedious in prep work, but trust me, it’s totally worth it! 

The best part about Pav Bhaji is the Pav Bhaji Chutney, so please do NOT skip out on making it. I’m not sure if it’s sold in stores, but homemade is always better. Plus- it’s extremely easy.

Pav Bhaji Burger
I can make a MEAN veggie burger, but I can also make a delicious Pav Bhaji Burger that will basically end all burgers.

INGREDIENTS

  • 2 cups cauliflower (roughly chopped)
  • 4 Russet potatoes (roughly chopped)
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 and 1/4 cup onion (finely chopped)
  • 4-6 cloves garlic (grated or in a paste)
  • 1/2 cup tomato (finely diced)
  • 1/3 cup red bell pepper (finely diced)
  • 1/2 cup orange bell pepper (finely diced)
  • 2 tbsp stick butter
  • 1/4 cup peas
  • 1.25 tbsp pav bhaji masala
  • 1 tsp cayenne pepper
  • 3 thai chili peppers (finely chopped)
  • 1 tsp fresh ginger (grated)
  • 2.5 cups breadcrumbs
  • 8 hamburger buns (I used brioche buns from a bakery)
  • 1/2 cup Pav Bhaji Chutney

Optional Toppings

  • cheese (I used fresh mozzarella)
  • onion (sliced)
  • tomato (sliced)
  • lettuce (I used a mixed greens (spinach, arugula, lettuce))
  • green chutney (for additional flavor)

INTRUCTIONS

  1. Boil the cauliflower and potato together in a large pot or a pressure cooker until fork tender. Be sure to add salt to the water. Make sure they don’t get too mushy.
  2. Take oil and warm it up in a pot on high heat. Add in your mustard seeds and cumin seeds. Once they stop sizzling, add in the onion and mix well. Change heat to medium.
  3. After 2-3 minutes, grate in your garlic and mix everything well. Let the onions sweat down until translucent.
  4. Once that’s done, add in the tomato, red bell pepper, and orange bell pepper. Turn heat to low and occasionally mix for another 2 minutes. Add salt per taste.
  5. Add in your butter and mix. If using fresh peas, add them in now. If frozen, microwave in some water and then strain and add into the pot.
  6. Mix in your pav bhaji masala, cayenne pepper, thai chili peppers, and ginger.
  7. When your potatoes and cauliflower are done, strain the water and mash. Mix this into your pot with veggies and spices. Check for seasoning and adjust per taste.
  8. If you are not eating right away, let this potato mixture rest for 2-3 hours. If not, try to keep it in a cold spot for at least 30 minutes.
  9. When ready to make the patties, add in about 1.5 cup of your breadcrumbs to the potatoes and mix well using your hands. Leave the remainder of the bread crumbs to coat each side of the patties.
  10. Take some oil and start heating it up on your pan on medium heat. Or, you can start up your bbq grill if you plan to grill these.
  11. Take even amounts of the potato mixture (dependent on the size of your bun) and form into patties. Coat each side with extra bread crumbs, and then start placing the patties on your pan or grill.
  12. Cook one side on medium heat for 3-5 minutes, and then flip over and repeat. Keep a lid on the patties while they are cooking. When the second side is almost done, add some cheese to the top if desired, and place the lid back on. Take it off of the heat when cheese is melted.
  13. To assemble the burgers, toast buns per your preference. Add 1/2 tbsp of Pav Bhaji Chutney on each side. Add some lettuce, place your patty on top, and then add any suggested toppings of your choice. Close up the burger and enjoy!
